I'm surprised at how many people willfully miss this point. In fact, some guy got into a snit with me today over the rinse/don't rinse issue, which ended in a tirade about using "Kangan water" (some sort of ionized water) to rinse all the pathogens right off the meat. He also called me an idiot.

It would seem that he is the one who's the idiot. Kangen water is a multi-level marketed pseudoscientific product which essentially does nothing. The claims they made have been completely debunked by chemists and medical professionals.

Below is a link to Steven Lower's page on "ionized water". He's a chemist and does a fairly comprehensive job of covering the science and debunking the claims made by Kangen and others.

Sounds great in theory, but as long as you have to break down your chicken, gunk is getting everywhere anyway: your hands, your board, your counter, your sink, your knife. In an ideal world, it would come pre-prepped in vacuum sealed zip-locked bags...
