If pretty much everyone liked the cocktails, then the evening was a success.

Thanks for this thread - you've provided a lot of really detailed information for any of us amateurs who find ourselves in a similar situation.

Wow, I'd be crestfallen if I put as much work and care into this as you did and had reconstituted substituted for fresh juice. I bet you're glad to be done! It was fun following along with your tale.

I thought I had gamed the whole thing with some intelligence. I worked with the same team last year and thought I had seen the range of issues, so I planned around them -- that's part of why I picked up so many of the minor ingredients myself. Last year, though, they did bring fresh citrus juices that they'd squeezed back at headquarters. So it was really surprising when that curveball came at me.

I'm in the early stages of planning year 3 of this undertaking. It happens in February. One thing I'm going to try to do this time around is get a second set of hands working with me. Better glassware. Actual fresh citrus. We'll see if I can pull off something respectable here.
