Ortanique-Style Onion Soup

  • 2 white onions, sliced thin
  • 2 T unsalted butter
  • Herb sachet with bay leaf, peppercorns, parsley stalks, thyme and crushed garlic
  • 1/2 c water
  • 1/2 c white wine
  • 4 c chicken stock
  • Salt and pepper to taste

Caramelize onions in butter. Add sachet. Add half the water and cook until dry. Add remaining water and repeat. Add wine and repeat. Add stock. Bring to a boil, reduce to a simmer and cook 20 minutes.
