I have a lot of oranges I want to use, and I'd really like to make some of those orange gel sticks to cover in dark chocolate. A web search hasn't turned up a recipe. Does anyone here know how to make them?

are you sure you aren't thinking of chocolate dipped candied orange peel? if so, there should be a thread somewhere here about the process.

so you're talking like pate de fruit?

there is definitely a thread on that as well...

edited to add: check also the thread on peter greweling's book "chocolate and confections" because he does have pate de fruit in there as well.

also possibly the thread on andrew schott's book, there are a lot of discussion about pectin and its uses in that thread
