  2. How were you able to get the coating so even? @Chris Hennes I've tried the preztel recipe a few times and mine never look as dark or as even as the book. Do I need to make a stronger lye solution than the book specifies?
  3. Where have y'all been able to buy this? Modernist Pantry seems to no longer carry this, and I'm somewhat wary of buying it off of amazon as a dietary supplement.

  5. @CanadianHomeChef For what it's worth, in modernist cuisine, they stated that the temperatures inside the rational combi ovens weren't very accurate below ~140 F. So I'm not sure how accurate this oven would be compared to the rational ones.

  10. Hello, I was looking to make the french lean bread with the raspberry fluid gel. The recipe that they have uses gellan gum, but they don't specify if it's high acyl or low acyl.   15. I was thinking of using it to do veggies if I'm cooking a protein; but looking through the threads it looks like most people here use these ovens instead of their main one. I primarily use my main oven for baked goods (like bread, cakes, cookies, etc...) and roasts. Is that enough information? From what I'm seeing a lot of people use the CSO to do toast(?). Is that one of the primary things that the CSO does better the BSO? I'm seeing the main benefits of the BSO as able to fit a quarter sheet pan, and possibly the dehydrating and proofing feature.
  16. Wanted to get your thoughts. I'm getting on getting a supplementary oven. I'm deciding between the CSO or the Breville Smart Oven Air. It looks like they're both on sale right now. The CSO being $159 and the BSO Air being ~$320 after some coupon stacking? if you had to choose between the two, which would you get?

  22. I wanted to post an update. Earlier this year, I had some issues with the control freak constantly tripping my circuit. I moved to a new place and I'm happy to report I haven't had any issues with any of my induction hobs tripping the circuit. I have another thing I wanted to ask y'all. How have you been cleaning your control freak? I have this white circle on mine and I'm not sure what the best way to clean it.
