  1. If DQ is concerned, they could do a little market research to see if the name is offensive. But I doubt few people have made that leap or care about the similarity in sound to a word that is not in common use and that many have never run across. Could be very wrong, of course. If there is enough media attention to this similarity, it will make it impossible for DQ not to make the change without looking like insensitive, racist slobs. Even when people of mixed Anglo and African-American heritage are not particularly bothered by the hue of their skin.

  2. Finally picked up a 500 ml ISI, and am looking for things to do with it as a home cook (not that the discussion should be limited to home cooking applications). Beyond the five mixtures suggested in the booklet that came with it, what have you tried that works out well? Any other general advice, applications or ideas will be appreciated.

  3. I was looking for fish sauce a few weeks ago at a Vietnamese/Phillipine market and found a variety of brands. I asked the advice of an Asian woman shopping, and she recommended a Phillipine brand, Purfina Patis. The ingredients are listed as: Fish Extract (Assorted blend of scads, herrings, sardines, mackerels), water and salt less than 1/10 pf 1% benzoate of soda added as preservative.

    Anyone familiar with this.

  4. Some clarification would be helpful if anyone can provide it. My understanding is that the 5 qt. "Professional" model 350 watt mixers do have the better innerds. The complaints have been about the new 6 qt mixers. Is this correct?

    I also noticed on Amazon a new 450 watt version of the 5 qt Professional. Anyone know anything about it...or its innerds?

  5. Ace, part of a national chain, is on Forrest Lane in Dallas. You can find some things much less expensive than the retail cook shops, and many things the shops do not even carry. (And vice versa, of course.) Worth a look.

    ...while (Octavio) Paz was right to point out that mole resembled curry, he was wrong to imagine that Mexican cooks had created mole as imitation curry, or that Indian cooks composed curries in an effort to emulate mole. He would have done better to picture both moles and curries as vestiges of the cuisine of medieval Islam, a cuisine that was enjoyed from southern Spain in the west to northern India in the east.
  7. Update: The KA just arrived. It looks brand new and it's spotless. I could not distinguish it from new if the box did not say it was a factory refurb. 5 qt, 350 watts, in white. I never could get any info on the warrantee from Amazon, but it says six months on the box (none for paint, but the paint is perfect on this one).

  8. Addison --- Alan Geddie at Dunn Bros Coffee in Addison is doing a word-of-mouth offer to introduce people to the difference that fresh roasted beans make. As far as I know this is the only shop in the DFW area that roasts on site.

    If you buy one pound of any of 12 bean varietals for a reduced price of $10, you get a small/12 ounce drink free: brewed coffee, latte, espresso, iced coffee, iced tea, iced crema. He says you can take one pound of one type of varietal --- or try two half pounds, or four quarter pounds of different beans. I think he is going to offer this through the end of July.

    I have tried the espresso blend (roasted to French roast) in my moka pot and the Guatemalan beans (roasted to Full City) in my French press, and can voutch for them: the beans are not over-roasted and the espresso is rich and smooth. They mark the roast date of the beans and do not keep them on the shelf if they are more than four days old.

  9. I believe the Le Cruset outlet stores (McKinney as well as San Marcos) are having a sale sometime this month. Seconds as well as firsts.

    As of late, the Le Cruset special deals on Amazon (follow the eGullet links) have been much better than the outlet stores. These change almost daily and are worth checking out if you are in the market for Le Cruset. Sometimes it will be just one or two colors of an item that are drastically cut. For example, a 5 1/2 qt plus a 2 qt round french oven in white for $130 shipped.

  10. I am going to order an extra bowl after my refurb arrives and I check it out. Do I need two extras, or will one do?

    How about other accessories? From reading Amazon reviews, there appear to be mixed reviews of the meat grinder attachment. Anything a have-to-have?
