  3. If you literally have no decent knives, a block with a small number 5-6 knives and a steel can offer very good value. Especially at times of the year like now. I'm starting to replace my [really] cheap block that i got when I moved out fives years ago with individual Wusthofs for my specific needs, but truth be told I more than got my money's worth and I will keep the block, too.

  5. Excuse the terrible iOS photos, as I left my DSLR at my London flat, but I went home to my parents and cooked for a friend last night. I'm particularly proud of the scallops as I've never done them before. These were British hand dived scallops, with avocado purée, raw and pickled apple and radish. Next was duck breast (butchered by me. Very proud too) at 135f for three hours, then pan finished with crushed potatoes, horseradish creme fraiche, seared chicory, shiitake and enoki mushrooms and plum and tangerine jus.

  8. Thanks for posting the total cost. I make that around £195 not including the £14 surcharge - which is very odd considering you're paying for international shipping and handling.

  15. What a farce. I sent a message to info@waterbaths.com I've left a message on a thread on [saving]FaceBook and i will see if they respond there. Frankly I find $70 for shipping with no allowance for taxes a bit steep. I Fedex'd a Guitar across the Atlantic that arrived stateside in less than 20 hours (about 16 hours actually, thanks to the time difference) and it cost less than $70.

  19. When I lived on site at a holiday resort, we had apartments without proper kitchens. Just a microwave and fridge. My room mate brought with him a two sided George Forman grill that had the closing mechanism on one side, and a normal flat top grill on the other. We got much more use out of the open, flat side than the Forman closing side. And the non stick surface was brilliant and was basically wipe clean. It meant we could cook half decent food rather than rely on the microwave. I don't have anything from infomercials, but a Food Saver style vacuum machine is obviously on my wish list, as is a mandoline for finely cut garnish.

  21. The clue is the shape of the Ketel One vodka bottle! Indeed I used Ketel 1 Jenever. It's poking out behind the Ferrand there. It's less strong than Bols and less malty also. Having drank their Jenever first, and Vodka days apart at a tasting, it's incredible how much of the character of the copper still is present in the vodka and how similar the two products are.
