  2. I'd never had poutine, but we had some duck poutine at Au Pied de Cochon in Montréal. Definitely to die for. Many years ago now, but very fond memory.

  4. Darienne, are you interested in Deborah Madison's Silky Braised Chard and Cilantro? This is a most superior dish. It's started with no added water. Her standard recipe uses 1/3 cup white rice, but I use 1/2 cup and then no additional starch needed for dinner. PM me if interested.
  5. I grew up eating bread and butter with watercress sandwiches. Tasty. Edfited to add that it's possible the original British version had Marmite on it, but we kids would never eat that!
  6. I'm like @lindag, only mine is tea. And a good book. Lasts about an hour. Unless I started the bread machine the night before, so the baking bread will disturb my consiousness somewhat earlier. 😄

  13. How do you clean the standard wire racks in the Anova? Mine are all covered in junk and, prepatory to dehydrating some herbs, I sought to clean them. The after-market wire racks recommended by @palo and the silpats recommended by @JoNorvelleWalker all fit in a standard sheet pan. Some very hot water and detergent gets these soaking, then a quick pass with a wire scrubber gets them clean. Any idea where to get a pan that's big enough to contain the standard Anova wire racks? 13" x 18" x 1 3/4" would do it. What do you do to clean off all the baked on stuff? TIA.

  19. Thanks, @Bernie. Of the 4 packets I made, I've put one in the freezer. I'll plan to have a stew nearby when I'm ready to open it! And we ate one. Just tender (no crunch, not mashed) at 185°F for 53 minutes.
  20. Can one speed the ripening of a peach by putting it on a windowsill that gets sun? Will the peach go bad if left for a day or two after ripening? (My friend in the nursing home loves peaches but today's farmers' market peaches are pretty hard. He might not notice the peach on the window sill for a while. I can alert his daughter to check, but that might take a few days to percolate).
  21. The recipe I have (from allrecipes) says temp is 185°F for 60 minutes. Will that pasturize them, @rotuts?
  22. Maybe this should go in Absurdly Stupid Questions, but I just bought a couple pounds of lovely young carrots. Should I sous vide them all, then reheat as needed? Here's the Anova carrot recipe but I'm thinking of using the Joule (bags) so that I can store the cooked carrots for a while. How long will sous vided and vacuum sealed carrots keep in the fridge?
  23. Since we're on the subject of fermentation and food safety, I'm wondering if it's possible to use a mild vinegar when preserving foods. Most vinegars are too vinegary for me. Several times I have followed @gfweb's recipe for quick pickles which uses only a small amount of vinegar, but I've also noticed the jar contents go blue if I've left them too long in the fridge. What should I look for in vinegar choices? Any recommendations? (I seem to be able to tolerate the salt, even though I'm a low salt person).
  24. Like AlaMoi I use the electronic method, scanning or photographing pieces of paper and downloading or pasting internet pages. These go into a note-taking app called Evernote where complex searches are possible.

    Basic Toasters

    For a long time we had a Breville long slot toaster which eventually died. Then we started using the Anova steam oven to toast bread (0% steam). It was the only automated program I used from the app. However it took 8 minutes to make toast! And DH refused to use it. So I bought a cheap toaster which didn't really toast the bread. In January of this year we purchased a new Breville Die-Cast Smart Toaster 4 Slice Long Slot. It was a lot more money and may have been made in China. It does toast however. And the long slot means it will accept homemade bread. The new Breville does toast marvellously, @ElsieD. The electronics have definitely been upgraded since my first Breville toaster.
