  1. Just to clarify, moltoe has shown a picture of the cover of the hardcover version of our book. The insides are the same, 172 pages, the cover is different with the addition of the picture of warmed shrimp in a hot foie gras sheet with olives and persimmon. The back cover is a copy of a menu we did, just happened to be from the evening moltoe joined us.
  2. Yes, we finished the book on Monday of this week. The book consists entiresly of pictures, 172 of them. I am truly inspired by pictures and visual images and so we felt this was a great way to express our ideas in a bound form.

  4. Paul, What are your inspirations? Where do ideas come from? What leaps out in the world which allows you to join a multitude of apparently dissimilar ingredients? And if they really are dissimilar how do they inherrently work so well together? Alex
  5. no, we are not trying to make a chicken tini or some other cocktail. The essence of roast chicken, chorizo, pork loin etc...that is what we are trying to capture, isolate and utilize. The hot dog tini is sick, twisted and something I wish I had thought of.
  6. so along the approaches you have provided I could make an essence of roast chicken skin by adding the roast skin to a jar of brandy for a fortnight. I must now begin the process. Thanks
  7. Not sure on the local of sheep milk, but we are looking to locate both sheep and goat buttermilk so I figured if you all are looking, you might look for these as well.

    People do not pay for experiments. Either add an extra dish, the experiment, at no cost or just work on the stuff on the side. With regards to preparing the meals, they should and will take more than a few last minute hours. The key is the planning, prep and organization.

  13. I must interject. To make a reservation for which you hope to be at a minimum a half an hour late at the end of the evening is well...wrong. If you have called the restaurant and let them know your situation and they say no worries, then go for it, but if you believe that taking the last reservation for the evening is good and then stretching it a half an hour and then adding a ten course tasting menu on top will be good for everyone around I think the boat has left.   17. Try this for wasabi Pacific Farms and since this is now a gospel thread, make your own vinegar it appears I have not ordered from Pacific Farms in sometime for now they are no longer selling whole wasabi, time to sit back in my pew

  19. use freeze dried bananas, burnt caramel, rum and somr methylcellulose to make hot creme brulees, or even hot banana creme brulee ice cream. thanks for sparking the idea.

Here is our recipe for olive chip sorbet Olive Chip Ice Cream 150 g extra virgin olive oil 140 g Lyle's golden syrup 216 g mascarpone 2g salt dried olive crumbs to taste* Puree the first four ingredients together until smooth. Place in ice cream maker and freeze until just past the soft serve stage. Fold in the dried olive crumbs and then place the ice cream in the freezer to mature. Scoop and serve. *Dried olive crumbs are made by pitting olives and then soaking in warm water to remove excess olive oil. After the excess oil is removed the olives are dried in a low oven (180 degrees F) on paper towels until dry and crumbly. We used it Here

  22. a dougnut without a hole is ... yes a danish. ok so here it is if you eat chocolate chip pancakes for dinner have you commited a crime? ah no. if they are serving breakfast or breakfast pastries are they not just being smart? sure they could make a sign and call the place sweet somethings but really the name is clever enough and if they can sell a great product 24-7 great. if they are selling garbage then lets start complaining, till then, saddle up and enjoy.
