@paulraphael I have the Smoke. I like it. the display is large , its very easy to configure ( My chefTemps or what ever its called was difficult to use and see the display ) I got a free needle probe when it was on sale. get on their email list w a gmail account or so they go on sale from time to time. Im not a fan of the rounded bottom on the remote. Id like it to stand up on a desk Ill make a support for it some tme. Ive not used it a lot so I can't say anything about its longevity

@weedy good points in my case I did an over night cook with out sufficient protection for evaporation. Ill correct that in the future. the inters in question were not sufficient to use my Big Rig up stairs w the SousVideMagic

well , that very much looks like a country ham this is their web pic : that looks like a ' ham ' are you sure your was cooked ? I think their may be lots for you to do w the E's ham but if you can't decide in a few days call them an suggest with them other options the ham you have to me does look like prosciutto that's an uncooked ham , of delicious proportions the ham on their web site looks like a cooked ham Im sure if you talk to E's they will make it right. and BTW congratulations for trying this stuff when it suits one , its the best , on its own rules. Ive got some Benton's bacon Huffing and Puffing in my iPot just now , making Turkey Ragu ! to die for in the end.

Turkey Dinner : CSO'd new potatoes this is one tranche of the turkey br. Ive SV'd over on the Sv thread : 142.6 x 6 h , then cold smoked for 1 hr or so. delicious. I saved the jus from all the bags as I rebated them after the smoke and fz I fz the jus and used some of it for the gravy i made : light torching an assist on the gravy from Minors low salt page : http://www.soupbase.com/Low-Reduced-Sodium-Bases-Gels/products/6/ its the RC lowsalt turkey base which I keep in the fz. a few add-ins : Bells seasoning , a few drops of RB40 , thickened Generic mixed veg from Fz. nothing fancy , but very tasty turkey.

I use fake crab. always buy frozen. the ' chunk ' stuff is better than the rolled-up finger I think they might have several varieties of BokC. my asian store does. try the small ones that have white stems and very dark leaves. Ive never seen the dark rise paper. Ill have to remember to look. is it thin like the white rice paper , that you moisten then use for roll up ? nice haul. I wish my store had Duck Eggs. quail eggs are too much work for me

@MetsFan5 consider slicing the ham you might want for a sandwich. Im assuming your PH has already been cooked. soak it for a bit in ice water , yes ice water. depending on the thickness of the cuts , just a few minutes to a little longer pat dry and make your sandwich. you will have less salt and then can think just of the flavor of the country ham. CH is like beer : an acquired taste. good luck

If I see the espresso and the Mint I might try them ! I remember Coca Cripies The Cereal I could eat a whole box at once then enjoy the SugarBomb Chocolate Milk at the Bottom ! Time change though .....................

@kayb thanks It still seem to be working well if I keep the water 1.5 " above MIN : the sharpie mark is the lower black mark works fine above this mark Im not , nor will ever be a " prime member " I did buy a few ( count your fingers and toes , that's about it ) AMZN shares for long term JB didn't appreciate it and did not call me on my Speed Dial w a free lifetime Prime as I now own ( infinitesimal amounts ) of the company a bit cheeky , Id say. so I do have AnovaWifi on reserve. cheers and thanks for your help !

I have two Anova's : A bluetooth and a WiFi. both purchased at a fine sale price. I also have a SousVideMagic from Canada a long time ago. it still does mighty fine service on my very large cooks https://freshmealssolutions.com/index.php?option=com_content&view=article&id=72&Itemid=100087 a bit rusty but fine back to Anova : I used the Anova bluetooth for an overnight cook . in one of my Coleman coolers I marked the min line w a Sharpie and have added water above that. that cook dropped the water below the min line as I didn't think too clearly as the ColemanCoolers are not sealed. added water and OK then I used that same Anova for a re-heat and heard some noise while the water was above the sharpie line. added more water , noise went away tonights dinner is going to be an especially delicious TB that had been smoked after the SV and Im re-therming it in a smaller Cooler , we water above the sharpie line on the same Anova about 1/4 " the Anova beeped too many times and did not keep the temp I asked for I was above about as much as 4 degrees I added more water so Im now up at least 1 or maybe 1.5 " from the MinSharpie seems to be working fine I can't of course say what sort of damage the A' suffered for several hours below the min but something sure happen and it seems to be cured for a while w more water 1.5 " above the MIn Ill keep and eye on Target , as I have the RedCard ( Free Shipping ! 5 % off ! why give Amazon 100 $$ etc ) and get another Anova @ 99 USD ( - 5 % ) whyy ? the Anova and my SV system are (?) vs is (?) Vital to me.

If I no longer need CB's , for whatever reason , I donate them to my LocalLibrary. they have a huge bi-yearly book sale. they might get $ 1 for them . possible now 2 for $1. Id have to go find them first . from time to time Ive found Political Correctness , esp. with regard to the Past which is not the Present , Odd. not all the time , just some of the time. I can see missing dishes at a restaurant now worth wile. but it adds very little to solving a very long standing problem.

its one thing to choose to no longer contribute to MB's wealth today or in the future. Im at a loss to understand what gitting rid of his cookbooks that you already own accomplishes. I think I have one or perhaps two from a long time ago. they don't bother me sitting on the shelf.

@Lisa Shock thanks I still subscribe to the NYtimes. its getting thinner every day when I pick it up on my driveway I would have missed this. way back when , independently of his behavior , and he behavior cannot be independent of his productions Molto Mario was a real eye opener to Italian Food.

@Anna N Im so interested in this technique and what you think of the results. soon I may join Costco for a year as they have a car buying service that Ill compare to AAA. hoping their deal is with-in 60 USD of AAA i.e. then I can look into their higher end meats for a year ! inc DB'd and Prime RB Cap meat. maybe Costco has a better deal than HomeDepot on FreezerC ( FC ) AAA unlikely. @Ann_T which oven did you get ? https://www.oster.com/ovens-and-toasters/extra-large-ovens/ I see three here. the ' black ' digital is more expensive , and I can't find out it its just for the color, or has other features. how hard would it be to take this oven outdoors in the summer on a deck and bake there , with a sturdy extension cord from the outdoor outlet w no rain in the forecast ? Ive done that many times w the CSO and where did you get the full sized stone ? any problems w the IceCubeSteam ? many thanks

I love banana cream pie I have not had one in a long time. as good as it is , its seems to be delegated to a lower tier. I checked two stores and Id like to try one , not make one and its not around. no MarieCallender's near me I think they are only in CA , NV , UT
