I tried wings today too. I made the Crispy Korean Style wings. They were excellent. Chris, I also tried the blue cheese sauce. I made the aerated version with the siphon. All my guests loved it.

Question on the Microwaved Cod and other fish recipes. MCAH specifies using 800 watts on your microwave but the Jan '12 MC blog posting which outlined this recipe said 600 watts. The times appear to be similar. I made some red snapper last night with this method using 800 w but it did seem a bit overdone. Do you think this is a typo in the book?

I made the microwave eggplant parmesan tonight. Very tasty and fairly quick since I used store bought marinara sauce. I didn't have the called for size pan so it came out a little messy so no pictures. I recommend trying it out!

When I plug it in to use for the first time and turn the switch on nothing happens. Then after two more trys it works. I have to store it away so i don't leave it plugged in. This is happening consistently now unfortunately. The Hobart N50 is calling me!

After my high praise of the new Kitchenaid I'm having trouble with it turning on now! I jinxed myself.

I was looking at a Hobart N50 last December and almost bought one. I then came across the new KitchenAid 7qt mixer which I got instead. The greater capacity is really nice and it has new dc motors in it which are hopefully better. I haven't had any problems yet and it works great. There is a 2 year warranty and you could buy 4 or 5 of them for the price of a Hobart so it was an easy call.

Minipack might be a higher build quality and better pump. I think one of the biggest differences would be the sensor vs timer functions. In other words the Minipack will stop after the desired pressure is reached as opposed to being set by a timer.

I've never really done a torture test to see the extent of it. I have the model with the h20 sensor so I usually just leave that on and it stops the machine when it starts to boil. Obviously product temperature will influence how quick this happens.

I almost bought the Hobart N50. I went to a chef supply store in Manhattan where they had one on display and some other brands. It's obviously very nice but I was surprised by the bowl. It felt a little flimsy to me and the 5qt size seemed smaller to me in person so I passed. Anyway I just ordered the KA 7qt from William Sonoma for $412 after the sale. I then ordered the stainless steel agitators from the commercial line from Kitchenaid for it. I figured that since I won't be using it too often I couldn't justify the Hobart price and I like the greater capacity of the KA at a fraction of the price. I've watched several videos of the Electrolux Verona/Asst and am intrigued so maybe I'll give that a shot someday!

I've been lazy and have not run the conditioning program on the boxer 35 too often. I've changed the oil last month after 6 months. I haven't noticed any problems. I use it only a couple of times a week. Enjoy it

Ok here's some info if anyone is interested. Thanks for the links on the bosch and electrolux. I watched some youtube videos demonstrating them. I'm going to read up on them some more. The Hobart N-50 will take the Kitchenaid accesories #10 size. The Kitchenaid 7qt: The Williams Sonoma version is slightly different from the commercial version (NSF rated, bowl design, all stainless paddles, 550 vs 800). I could kind of talk myself into the more expensive model however WS has an online sale this week of -25% off. So I don't think I would pay nearly double for it. Chefs Choice has a nice all metal meat grinder attachment for these machines as opposed to KA's plastic version. I'm leaning towards the WS 7qt Kitchenaid. The Hobart is great but 5X the price and less capacity. I won't use it that often so I don't need a commercial machine. The electrolux is nice but I'm not sure I understand if there are any benefits. That's sounds pretty bad. I think I want to get a stand mixer design because I want to grind meat too. I'll keep looking for info. The hobart seems bulletproof.

I'm looking for a stand mixer too. The KA 7qt models: the WS version is a lot cheaper than KA's website which is NSF certified. I assume the motor is the same. Does anyone know if anything is different? I was looking at the Hobart N-50 but I can't seem to find many attachments for it like a meat grinder or pasta maker since it's a #10 size accessory port. Does anyone know if anything is available. Do you think Hobart is worth 3X the price of the KA? thanks
