  3. Out of all the simpler things in life being the best, this would be at the top of my list. It doesn't look special, but the combination of the slightly sweet caramel soy and the liver is absolutely superb (if I do say so myself lol however, it's not my dish but my parents'). I thought I'd share it in this forum I started off with the pork belly - cooked it covered in water for about 30 minutes and then removed and cooled it. I had to tweeze the stubble off the skin which was as big a pain as tweezing my own armpits. (No, I didn't use the same tweezers lol). Then I sliced it into 1cm pieces and placed these into a different saucepan and added a tablespoon of soy sauce and the same of caramel (dark/thick) soy sauce. I added the stock from simmering the pork belly to barely cover the ingredients and cooked this for another 30 minutes, and then stirred in the thinly sliced pork liver at the end. I wasn't sure if it was safe to leave the liver slightly undercooked which was how I remember this dish from my childhood, and how I would've liked it. But it was still quite a nice texture and not too chewy after a minute or two of simmering. The only thing I forgot to add to this dish was ginger! Anyway, I was still in heaven and just couldn't stop eating it...!

  6. Not a silly question at all. hzrt8w hasn't been around so much lately, so I've taken the liberty of answering. The black beans are basically preserved in salt - a technique used for preservation long before refrigeration was available. I keep mine in a jar in the cupboard and I live in semi-tropical south China. They would probably last longer than me, if I didn't keep eating them! Lol! (at "last longer than me"!)   8. This is probably too late, but hope it will help in someone else's future search. There's a place I go to in the 6th called Le Pub Saint-Germain (rue de l'Ancienne Comédie) which has all that (cool/hip, loungey, food...). Not been past happy hours, though it looks like it's set up for night owls. It's got two (or three) levels/sections. Ground floor is a comfy cocktail bar setting and upstairs is set up with (what looks like) Chinese antiques.
  9. Hi, believe it or not...I started storing my favourite recipes on my email account. This was for ease of search/access...and from anywhere in the world. For long and involved recipes, I now take a photo of the handwritten or one from a favourite cookbook using my iPhone and attach it to an email without having to type it all up.

  11. Oh yes, forgot!!! There is a place called "TEN TEN" in Perth that serves (probably the best) Hainanese Chicken Rice. It is not the best, but it is The Best In Perth!! Like most Malaysian Food lol! It's in East Victoria Park (...? I will have to go back and check).
  12. Hello again everyone! I'd forgotten all about my membership here (!) until someone told me about others using my nickname and to Google it. Well, who gives a monkey's, really LOL - but here I am, back again on this wonderful site as a result, and just back from Paris too - more about that when (or if lol) I get ALL those food photos onto my iMac... So many food stories..................!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! Thank you very much to annachan, rarerollingobject and Simon Lewinson for the recent tips. Just a note re: Hainanese Chicken Rice in Sydney.......... I was over in Sydney before I went to Paris and I was sooooo lucky to have discovered a fantastic food blog by this guy which had AN ENTIRE LIST of Sydney places for Hainanese Chicken Rice. Needless to say, it had saved me weeks (/months) of research and trial. I am not sure what the rules are about posting links here. I am too jetlagged and can't be bothered to read the rules right now lol! Message me privately if you want the link. PS I have since been back to the Penang Food Place on William Street in Perth too - it is by far the best in the whole of Perth for the following dishes: Nasi Lemak, Crispy Yee Meen (SERIOUSLY crispy), KL Pork Noodle Soup, Roti Canai with Chicken Curry (their chicken curry is the best)...... Apart from my personal preferences, there are dishes which are apparently best sellers like "Mee Pok", and I have also tried the deep fried Fish Wings which are EXTREMELY crispy on the Entree section of the menu if that is what you are looking for (crispiness). But their Hainanese Chicken Rice is definitely NOT good. Cheers, The Queen of Kai Fan
  13. Just a quick update: the Penang Food Restaurant in William St has changed hands yet again. I have been unwell so I got my other half to get some take away chicken rice for me recently. When I opened the packet, it was char kway teow instead - and a whole lump of goo at that. So... no idea, really, what the chicken rice there is like now. They weren't at all concerned they had gotten the order wrong - blaming it on new staff. Who knows.
  14. Mmm, thanks... must try on next trip to Paris! I didn't come across it last time I was there so I bought a can of it and ate it for breakfast the day I left LOL. Pathetic, I know - but I was desperate lol. It actually turned out to be pretty good too lol.

  16. Mmm, the memories come flying back...thanks for sharing. I loved ADPA, especially after shopping at Chanel round the corner lol. It was the perfect place/meal to top off the ultimate Parisian experience. I was given a little gift of some sea salt after the meal - love to find out where I can buy some. Did you get some too? It is such a nice touch. At Guy Savoy, I got a really nicely-presented welcome gift (even before the meal!). Ahh, the style of the French (swoon).
  17. Now that is a huge surprise. I often think we have a little Tokyo around here in Neutral Bay/Crow's Nest. In Crow's Nest off the top of my head, there is Ju-Rin, Sakana-Ya, and Waqu, all of which appear in the Sydney Morning Herald good food guide. In Neutral Bay there must be seven or more Japanese restaurants/food shops within a 1km radius, including Jugemu & Shimbashi which is basically two Japanese style restaurants in one. Hmm, did not see any of those at all... none of those names ring a bell. Maybe I just didn't see them (sigh). Are they only open at lunch time, perhaps..? What's a good one to go to for some uni?

  19. Wow, I must have gone there at the wrong time Moved to St Leonard's last year Feb/March and didn't see many Japanese places at all around there or Crow's Nest. Regretted it big time - foodwise, I found LNS (lower north shore) definitely is NOT a foodie area or an area for good living despite being a good, comfortable middle-class area. One thing great was the pub food at that pub where the train station is, though. Great steaks, perfectly cooked to order - with chips, gravy and veggies for only $10. Eat your heart out, WA lol. Pub food in WA............. ugh, what can I say - 5-star prices for mediocre grub- get real, guys.
  20. Hi Snadra, Oh yeaaahh, the silky texture and the jelly!!! (Slurp!) I had heard about both the Temasek and the North Ryde ones being very good however never got round to trying it. Do report back after your pilgrimage! I am intrigued by the sound of the beanstarch dish. What type of dish was it - was it a type of dessert? Yes, the place at Townhall station is down at the basement. Great variety of dishes for a food court setup but everything seemed a bit tired looking, especially the chicken in the Hainanese Chicken Rice lol. One thing which really ruins this dish is when the chicken is overcooked/dry and the silkyness is gone (sigh). Kitty
  21. I love Krispy Kremes - believe it or not, I first heard of them on Will & Grace LOL! So when I was in Sydney, I HAD to try some - they weren't piping hot out of the oven but I loved the variety and colours and I love all things sweet so I kind of overdosed on them the first time I discovered them lol. Then I went back the next day and bought another 6 KKs lol. I then discovered when I returned to Perth that we don't have a Krispy Kreme outlet here (and someone mentioned we never will - not sure why). So the next time I was over in Sydney, I bought the largest box home - probably half the plane did as well, and there were Krispy Kreme boxes falling out of overhead lockers on the flight lol. When one is faced with little or no choice, a day or two -old KKs are still divine lol. It's so wonderfully American... makes me feel not-so downunder when I am eating a ton of KKs and working it all off at the gym the next day in my Nikes hehe.
  22. Wondering if anyone knows where I can buy some uni in Perth. I used to buy it at the fish counter at David Jones' Food in the city (it was pretty good value for money - a tray for only about $7). I haven't seen it for ages at DJs and am slowly starting to get withdrawals lol.
  23. Where do you go for your favourite authentic Malaysian Hainanese chicken rice around Australia? PERTH So far, my favourite in Perth is still at the Penang Food Restaurant (William St, a few doors from Kakulas Bros gourmet food shop). If they are closed, I go to Tak Chee (a close second - not quite as authentic, although with a larger serve of chicken, more Ipoh-style with beansprouts but the chilli sauce tastes more like it is sweet chilli sauce or a bought chilli sauce instead). SYDNEY (Not found too many yet...) So far: the East West food stall at the Mandarin Centre Food Court in Chatswood is OK although once the chicken was underdone (raw so I sent it back and they poached it again which ruined the texture (They do a lovely fish laksa though, with huge chunks of fresh fish). Another Hainanese Chicken Rice I tried is at the Townhall station - they seem to have a great selection of Malaysian dishes, however the chicken was completely overcooked.
  24. I would like to know what makes Jeffrey Steingartens an expert on MSG (or the Chinese, for that matter). The reason why everyone in China doesn't have a headache from MSG could well be that they don't let on to the rest of the world. After all, didn't they used to kill traitors in China? Being Chinese, you'd think I'd know but my closest and last family link to China, my grandmother, no longer exists in this world so I can't check with her anymore if this is still the case today. Anyway, I am not usually one to sit on fences, but with MSG, it is something I don't feel particularly strongly about - I can take it or leave it. The thing I feel most strongly about is that this relatively minor ingredient on the scale of things divides so many. I feel it is probably like everything else in life - if we choose to use it, then it has to be done in moderation - a bit like salt... and that "splash" of wine or brandy in our cooking. And if flavouring with anything in particular has a detrimental effect on our health, then isn't it best to avoid using it? Over the years, I have come across a few people who get a bad reaction from anything with MSG and of course there are many people who aren't affected at all. I sometimes get a bad reaction from too much MSG on a regular basis where the roof of my mouth gets extremely itchy and my hair falls out, usually in clumps in the shower. Anyone is welcome to come unblock my drains when this happens to see if it is in fact a conspiracy. I still have hair left so I don't mind if there is sometimes a little MSG in my food - just not a lot and all of the time or I might eventually go bald. Again, everything in moderation - if I choose to break my own rules once in a while (like with wine), then I wear it (or my drains do). I like how a pinch of MSG can pack a punch but I think that is the key to using it - just a pinch. Preferably measured with Chinese fingers
