    Garlic Presses

    If you want your garlic very finely "chopped" try peeling the cloves and grating with a microplane. It's a quick way to end up with mountains of the stuff.
  2. Oh sooo delicious simply stir fried in EVOO with lots of garlic, coarse salt and hot pepper flakes.
  3. Getting back to red food . . . Are beets a red food or would you call that color purple? I think it could pass as red. They're delicious roasted and then marinated in vinegar, oil and garlic or made into a nice borscht. When added to risotto they make a dramatic presentation as they do when they're used to make pasta. Also, is cranberry juice red or would you call that color pink? (Mixed with vodka, of course.)

    Egg Science

    I've been told that if you're going to scramble eggs and then hold them for a while (for example, at a lunch buffet) you should add a few drops of citrus juice to them before scrambling. When hard boiling eggs I've found that starting with the eggs in cold water, bringing it to a boil and then turning off the flame and covering and allowing to stand for 10 minutes will produce good results and never a hint of green.

    We made eggs benedict today but didn't have Canadian bacon so we used pork roll instead. Mmm!

    Dinner! 2003

    Tonight I sauteed calf's liver w/ onions. Used a REALLY hot pan and just cooked it briefly so it was still pink inside. Delicious. But it made me wonder why I don't know anyone who actually likes liver besides me. Why is that?
  10. Great Szechuan in Aberdeen - Razor Clams w/ Black Bean Sauce are a must but all their stuff is luscious.
  11. And where are you based? Aberdeen, New Jersey - but I think most of the Jersey Stop and Shop stores have them as well.
  12. Just for your information - Fresh sea scallops - no chemicals or water added - are frequently available at the Stop and Shop supermarket near me. I've prepared them many times with great results. They are very tasty and often less than $9 a lb.
  13. The Bootlegger in Highlands has tasty big burgers and it's a great hole-in-the-wall local bar and hangout.
  14. Whenever I pass Wegman's there are people standing by the highway protesting heir mistreatment (busting) of union employees. Was that dispute settled recently or is it still going on? There was mention of Kings breaking the unions but I think Wegman's has problems in that area as well.
  15. Excuse my ignorance but is a Tarte Tatin always made with apples - I have a craving for one of those savory tarts with carmelized onions on top (or as a filling - is that what it's called?) Just wondering about the true definition of Tarte Tatin.

  17. I haven't been but I've heard raves about Molly Pitcher Inn in Red Bank. Not cheap, but supposedly the brunch of your dreams.
  18. Eli's in Matawan gets my vote. Good bagels, coffee and all the fixin's - tables and chairs - AND they keep it clean. I know it's a chain (oh, the horror) but they are mighty tasty.

    Thanks, Jinmyo, for the good idea and the link. I'll have to sift through all that bibimbap info to cull a recipe that's simple enough that I won't screw it up. I do love bibimbap though and I'll take a shot at preparing it myself.

    Spagetti sauteed with olive oil, garlic and bok choy. (I've been unemployed since August and it's getting more and more difficult to come up with interesting things to eat on a budget of virtually zero dollars.)
  21. A raw egg and about three quarters of a cup of white sugar in a coffee cup whipped up with a fork until it turned very light yellow and very smooth. Eaten with a teaspoon, it was truly delicious!
  22. I had some of that "live" cobra heart when I was in SE Asia and I did not feel it beating as it traveled from my mouth to my belly. How did that rumor get started?
  23. Gut the fish. Season inside and out with salt, pepper, lemon juice and olive oil. Stuff with your favorite herbs (lots) and thin lemon slices. Put it on the barbeque grill for a few minutes and then ENJOY!
