  1. Crusty bread goes well with a cheese course. Also, consider an ice wine or two.
  2. In the Miele wall oven I just took out, there is a setting to have both the top and bottom elements come on for baking.
  3. I like my men charming, my doors held open, and my nails long. I also adore big slabs of juicy red meat, peel and eat shrimp and all sorts of other things girls aren't supposed to eat. As evident at Varmint's pig pickin, I have no hesitation in plunging my hands into food to mix it up, nails or no. I don't order a lot of messy food in restaurants though because I just know that I'll end up wearing it. Especially if I'm wearing white. And frankly, I could care less about chocolate. Damn

  5. I'd use a rack in the pan rather than lining it with veg. I'd be concerned that the fat from the chicken will drip into the veg, making them soggy, so the bottom of the chicken will be soggy.
  6. Perhaps vegetarian is too broad a label. She has had to cut meat out of her diet due to colon issues, but is happy to consume other things, so I'm looking for meatless recipes. If that makes sense.
  7. I'm in need of a good vegetarian cookbook for a Christmas gift. Basically no meat, but I don't think she's restricting herself in dairy or anything. She's a reasonably accomplished cook, so something with good, fresh ingredients is a good place to start I think. Any ideas for the best one out there?

    Protein powders certainly. Have you tried a soft foods, minced diet? Or making protein rich soups and pureeing? My mother also cannot digest very easily and practically lived on ensure until we changed her foods to very soft, minced things, like soft boiled eggs, the whites minced, egg salad, etc. We found by breaking the food down, she was able to eat a bit more and digest it. She still eats very little at a time, but gets most of it into her in 5 or six stages. Definately don't heat the Ensure.

    Just to speak to the handles on the All Clad line. The handles on the regular stainless steel line are kind of a pain. Part of the reason I like the copper core frying pan and other copper core pans is that All Clad has put a "finger lip, up under the handle close to the pan itself. The handles are also slightly wider and flatter than the rest of their lines.I find this helps a lot with the grip.

    Beef Tenderloin canapes. Roast a tenderloin the day before that has been brushed with olive oil, and pressed with chopped green peppercorns, green onions and kosher salt. Sear at high heat in a cast iron pan then bung it in the oven for 10 minutes or so till rare. Cool and chill. Make toast points and store in a ziplock. Mix a whipped cream cheese (I use the cracked pepper cream cheese) and some horseradish together, spread on toast points. Slice tenderloin thinly and put on toast points. Or Garlic Peppercorn Cheesecake

    All of my regular All Clad stainless steel pots, pans and roasting pans go through the dishwasher. They've always been fine.

    No I haven't, but then, I don't put my all clad non stick pans in the dishwasher either. Since I only have once piece of this line so far, it hasn't been an issue, but the pan has also cleaned up very easily by hand.

    I haven't had to polish yet, but at some point probably will. Then again, I'm fairly anal about keeping my stainless steel pots shiny and clean. I use barkeepers friend on it and it seems to be fine.

    I have the stainless steel copper core frying pan and I love it. While I wouldn't necessarily get copper core sauce pans, Unless you're making sauces, I would get more frying pans and saute pans. I was really pleased with the heat distribution and retention when using this pan to sear steaks a couple of weeks ago.
  16. As long as you've got some counter overhang, that's a great idea. I did that in my first kitchen renovation, and loved it. (yes, this is my second one. No, not the same house. ) Then, if you still decide to go with a 48 in range, you've got 2 and 1/2 ovens, but then, really a 36 in range would work well, and give you maybe an extra cupboard upper and lower and some extra counter space. In my current kitchen, the second oven was on a wall with a microwave over it. The placement was similar to what you are describing for your new kitchen. Even though there are only 3 people in our house too, it never failed that my son would need to get something out of the microwave, or me out of the oven, right when someone passed right behind one of us. I had to turn to put the hot dishes on the counter behind me. A slide out shelf might work. If you go with a 36 in range and the oven in the island, you'll get back whatever lower storage you might lose with this, and there are lots of benefits. They can be stacked on top of each other or split. You could also put the wine fridge in the island. Yeah, there's a lot going into the island, but you've also got a lot of room there. You could have wine fridge, and wall oven in front of that on the other side, then sink then dishwasher. You'd still have room for a few bar stools at the other end and side. In my current kitchen they are stacked, but in the new reno, we are splitting them up only because of the way the layout worked.
  17. Just a couple of things to think about. It looks like you're removing all seating area in the new design, which is fine if you've got somewhere else to eat or are maybe building in some seating around the island. A 48 inch range is great, just remember, that the second oven is usually significantly smaller than the main one, so keep in mind what you'd be using the second oven for. You might consider a wall oven built into the island, that looks like it could accomodate a good 27 or 30 inch wall oven. I hated having the microwave over the range and a range hood is a much better choice there. If your son is the primary person using the microwave (as is mine) is there an easy place for him to set down hot dishes coming out of it? Or does he have to turn and hope no one is behind him to place it on the island? I'd consider getting a bar fridge to go with your wine fridge. It gets pop cans, bottles of water, juice and beer etc out of the main fridge, which can free up a lot of room in the main fridge. In some of your deeper cabinets at the top, consider maybe dividers. Great for cutting boards, sheet pans. (I'm in the middle of my own kitchen renovation, so some of these things are currently on my mind!)
  18. Welcome back to blogland Dave. Based on posts elsewhere, Ms. Melkor is a pretty good cook in her own right. Do you share cooking duties, or do you do most of it? Do you each have a dish you would consider your "signature" dish?
  19. Racheld, that was a most lovely poem. Tonight, as my son prepared to bid his final goodbyes to his grandmother, I read it to him. At the almost ancient age of 14, when he's too "cool" to be emotional, he asked to print it out to lay with her when she "takes wings". Our Thanksgiving is long past, but yours has reminded me again how thankful we should all be at all times for good food, good friends, and close family. Thank you.

  21. That sounds wonderful. What size cans of tomato juice? We get them in varying sizes here.
  22. Well, tomato sauce comes immediately to mind. It freezes well in ziplock bags and then you've got a base to make spaghetti, lazagna, penne ala vodka etc.

    I finally got my seed kits today! Now I can start growing. I have three different seed kits, Italian, Gourmet and French. Can I mix and match the pods in the grower?
