  1. I want to buy some lemons and limes in bulk. What is the best way to freeze the zest? If I remove the peel and 100% of the pith, is there any reason why I can't pulverize the flesh in my Vitamix and strain that mixture to maximize the juice? I'd freeze the juice in ice cube trays.

  4. This may or may not be of interest to you bakers out there. I find a lot of the small batch baking stuff calls for buttermilk. As we don't drink it and it takes a while to use up, I freeze it in these egg bite bakers. They hold 1 /4 cup each.
  5. Thank you all for your responses. I ended up buying the Cuisinart WAF 350C and have used it twice. I was not happy with the waffles. They were dark brown on one side, almost too brown, and barely tinged with colour on the underside. I'm going to try another batch and cook one square up on each of the settings and see what happens. Day two I made muffin sandwiches. I toasted the English muffins in the iron, and cooked sausage rounds in it as well. I scrambled two eggs and spread them between the 4 pancake slots. 0nce I flipped them, a slice of cheese went on two of them. Once the cheese had meltedwe had our sandwiches. That turned out really, really well. We'll see what happens with the next batch of waffle batter.
  6. Chocolate Cream Pie from Dessert for Two. The reason the tops look different is because I had plastic wrap on one to prevent a skin from forming while the other went without.

  10. We have the the Breville Smart Grill and you can't get waffle plates for it. They do sell separate waffle plates but it's for a different model.

  12. I'm thinking of buying a waffle iron. I'm not looking for one that makes only a single waffle at a time, I'm looking for one that makes a 2 or 4 at a time. Anything to look out for, both good or bad? Any recommendations?

  16. I made a half batch of 6 cookies of Christina Tosi's Dulce de Leche Cookies. These are really good.
  17. Just as a point of interest, they are $38.34 in Canada excluding 13% sales rax.
  18. Tonight's dessert is from "Desert for Two" by Christina Lane, called Old Timey Pudding Cakes. These were good, not spectacular, but good.
  19. I would have, had @blue_dolphinnot beaten me to the punch. My MIL was moved to a dementia ward last week. She said she didn't like it because everyone is old. She'll be 101 in May. She has a love of date muffins and I have made them for her many times. John will be going to see her soon and I'll be sending down a batch with him. I believe that food memories bring them some cheer.
  20. I made another batch of the lemon bars from Small Batch Baking. Oddly, while we really liked the first batch, we were not as enthused about this batch. I didn't change anything in the recipe but I found the lemon taste overwhelming. Time to make something I haven't made before.

  22. Today I did a repeat of the Sweet and Salty Chocolate Cake. I did not make the dulce de leche icing, but rather served it with whipped cream sweetened with some cinnamon sugar. The recipe is from Small Batch Cakes by Edd Kimber.
