Yesterday I took delivery of my new air fryer, the TFal Infrared. Apparently infrared is new technology in the world of air fryers; I haven't heard of any others. It replaces my Instant Vortex Plus which stopped working. As you can see, it has a smaller footprint and is much lighter than my old one. It also has a smaller basket than my old one. My 1/8 sheet pans, which fit the Instant, do not fit the new one. It has three features which I didn't have with the Instant. First, it has a toast setting and since it is lunch time here, I'm looking forward to see what kind of toast it makes. Secondly, it has a crispy finish feature. Using this, the fryer automatically adds 2 minutes @450F on the broil setting to the cooking time. Finally, there is a depression in the basket that holds 1 ounce of water, which they say might be useful when cooking, say, vegetables where the moisture would be beneficial. Last night I cooked up some plain chicken wings using the broil setting for 15 minutes and crispy finish. They were great. This morning I baked a couple of mini scones, and that worked just fine. Off to make some BLTs and try the toast function.

I just bought the Kindle version of the Dehydrator Cookbook by Luna Francis. It's currently $4.62 CDN. I figured for the price I'd give it a shot. I'm also eyeing The Dehydrator Bible: Includes 400 recipes by Jennifer MacKenzie.

I ordered the wrong part for my Breville Food Processor. I ordered the Mini Processing bowl for the Breville 16 instead of the Breville 16 Pro. I spoke to the Instant people this morning and in a nutshell, it's not fixable, out of warranty, and no special deals for replacing it. So I'm going to give the TFal IR a serious look. Which makes me wonder why the comment about the carbon fibre heater. I know nothing about these things so can you explain your comment? I'd appreciate it.

The IR air fryer looks interesting especially since mine just went on the fritz. I may take one for the team, depending on what the Instant people tell me tomorrow. My current one goes from 325 to what looks like 420 in one fell swoop. Hard to tell for sure as only partial numbers are displayed.

Well, the display is working again after having dried out overnight. I'll test it before I need to use it again.

I will never again put my Anova Sous Vide cooker in the water bath upside down and expect to be able to use it for that night's dinner.

The temperature read-out on my instant Vortex AF has gone on the fritz. Only partial parts of numbers show up. Also, it's hard to tell but it looks like the temperature settings are also off. Anyone else have/had this problem?

My sister brought me a half bushel of peaches, or 48 quarts. I started to dehydrate 1/3 of them in the APO and that did not seem to work. I took them out and put them on trays and froze that particular lot. I decided to spring for a dehydrator and thanks to Amazon, my Cosori came the next day. I ended up peeling and slicing another 1/3 (not very evenly, I'm afraid) 6 trays worth, which equated to about 1/3 of the peaches. Everything I've read said to condition the peaches for a week, shaking them a couple of times per day. However, there appears to be moisture on some of the peaches, probably due to the uneven cutting and I'm worried about mold. I don't want to lose them. Is it okay to freeze them without conditioning? I've attached a picture of the dehydrated peaches. The last 1/3 of the peaches I pureed and reduced by half. One thing I made using regular puree was peach caramel, inspired by @Pete Fred. I also used double strength puree to make ice cream. The peach caramel was delicious on today's pancakes and we haven't tried the ice cream yet. Now that I have a dehydrator and not using the Anova for that, I'll post my experiments in the appropriate topic, assuming I can find it. No luck finding it so far.

@Pete Fred. I made the peach caramel yesterday using the plum caramel recipe. It's delicious and I would never have thought of making such a thing, so thank you for the inspiration. -
