Good news - the fridge has arrived, is plugged in and is humming along with a Spot in the fridge and one in the freezer.

Good to hear that you have a replacement! Were you able to fit everything into this smaller one? And did they take the old fridge away? It does sound like it will be tricky to find one the right size to fit into that gap.

I feel for you guys! The misery of fridge replacements, ugh.

Our last fridge trauma was about three years ago, just as the pandemic closures were well underway and our newish LG died on us. It had done something similar about a year earlier but we were able to revive it then by unplugging it and leaving it overnight. No such luck this time.

We couldn't book an appliance repair person to come and look at it for weeks so we just accepted we needed a new one. Shopping options were extremely limited and shipping times were already crazy long so we knew we had to find something in stock. We lucked out with one local store that had a few choices and I ended up loving the GE one we picked. We sold that house a year or so later, I wonder how the newer fridge holds up!  🙂

In this house, I wanted a different fridge but we kept the old one in the garage. We don't really need a second fridge, but I don't want to risk being caught an extra on hand anymore! How sad is that? 😄

I want to make some hot red pepper jelly.  Ingredients are red bell peppers, Scotch bonnets, sugar, vinegar and pectin.  Is there any reason why I can't freeze this in canning jars instead of canning them in a boiling water  bath?  Thanks!

As @blue_dolphinsaid, it's a safe choice. Just the usual caveats when freezing - leave a bit of room in the jars for freezer expansion, let it cool and set up/gel before freezing, thaw and store in fridge, and you may get a bit more 'weeping' or separation once thawed than with water-bath canned jelly.

I suppose so. I hadn't heard of that cocktail until now and was making a birthday drink of my own creation.

Happy Birthday!  The ice looks beautiful. Was it an enjoyable beverage?  🙂

I like crispy bacon. I even enjoyed the skin on stuff my dad brought home - but again crisp. I am a chicharon fan. However pork belly has never appealed when people talk iabout the unctuous fat. I have never had it offered to me and no interest in trying.

I like to use a mix of pork belly and pork shoulder when I make Filipino Pork Adobo, but the pork is cooked for quite a long time in that cooking style. Similar to this.

I prefer my bacon somewhat bendable. Too crisp and it loses taste, I think.  🙂

In fact, I would say overcooked bacon is a food that I just don't like, ha.

I offered $100 each to the two people who would be delivering the fridge if they wanted to deliver before or after hours or over the weekend as long as it was before Monday.

You are a very wise woman! Smart of you to give it a go. And so happy for you that it worked! 😄

Save a bit by buying a scratch and dent.

That tiny dent is at perfect cat height, just begging for a magnet or sticker just for them! A little mouse sticker would be funny. 😆

  6. Rather tired of zucchini, but very impressed with amount from a single plant. the snap peas are very sparse this year so I've been buying from local farmstands. But tomatoes have been coming along nicely - have been eating quite a few cherry tomatoes plus a few mid-sized ones ripening, even some beefsteak ones that my husband is growing. Serrano pepper plant is doing great. And bush beans also, had steamed beans for dinner last night.

Picked a few more beans and tomatoes today. Serranos from a couple of days ago and now more are ready to pick. This is a very tiny garden - just a few small raised beds and some pots, so I'm pretty happy.

Tom is really good on Last Chance Kitchen and I’d like to see that as his main gig with a new lead judge (Gail or someone else) stepping in on the main episodes.

I really enjoy Last Chance Kitchen (sometimes more than the main show) and I agree, he's pretty effective there!

You are now an official member of the Sneak Zucchini To Your Neighbors club.

I'm still at Stage One: Try to sneak them into meals so my husband won't know, ha.

But yes, if this plant keeps on producing I'll be ringing doorbells and running. 😄

  9. I've been getting small but steady amounts of strawberries. Usually just enough to have with yogurt or cottage cheese for breakfast or to start a fruit salad.

And a surprising number of zucchinis from a single plant. I can't believe the way it has taken off. I've already harvested 8 or more zukes from it and here are 4 more from yesterday. I'm not a big zucchini fan, my friend grew some from seed and gifted me one of the small seedlings. I delayed in transplanting it and it was looking a bit neglected when I finally did, I wasn't sure it would make it. 😄

Sometimes I just sit and admire the flowers, though. They really are lovely, aren't they?

What casserole type dishes can I include them in (possibly with the intent to hide their existence from Ed until I can get him to accept them.)  Which ones can we eat raw?  Which ones might Ed be willing to eat raw?

Deb Perelman has a few ideas in her books and on her website - Smitten Kitchen. I've made her Pizza Beans casserole with kale  a couple of times now. She is often trying to incorporate more greens in her dishes for her kids in ways that they don't notice or don't mind.  🙂

I throw kale or chard or beet greens in with soups, especially veggie or bean soups.

When making salads with other ingredients/lettuces, I sometimes add little bits of baby kale, young chard and/or beet greens. My husband isn't keen on these veggies on their own, but when mixed in with something familiar, he's ok with it.

I sometimes use kale, chard or beet greens when I make lasagne.

Looking through the latest Canadian Costco warehouse sales brochure and I see the Ninja Creami will be priced at $134.99 Cdn from June 26 to July 23. I don't see it on the website yet, but assume it will be there tomorrow. I will try to post the link, if I remember.

Can't find it on the website for some reason, maybe it's Warehouse only?

At this price, I think I might be interested. Has it been featured at this price before?
