  1. I really like that idea. What beans are appropriate? I also thought to look up a recipe for refried beans. I hope I will find soft avocadoes today!I thought to use that too.Thank you soooooo much!
  2. we get all sort of peppers here but I have no idea what kind! Will try -I have some dried-a bit strong tasting but my kids like hot-much more than I do.
  3. Wow thanks everyone! Well, they taste a bit bland and this nice corn kind of a taste, but not yellow corn taste. I liked them. I did not have anything really to fill them with as I was so excited to first just make them. I tried stuffing with cheese and frying-was yummy. They did not get bubbles, but it kind of reminded me of making pita-and one or two even was split- able like pita kind of. Now I need to think what to do with the ones I plan on making on Saturday for family lunch! This is fun!

  5. Well it is a beginning. So I drove to Holon, where there is a store called Tres Pesos, behind an open vegetable store, and it was pouring blessed rain! It is on the second floor of some storage house or something and consists of a few quaint rooms- one main one and a few small offices. There are some sombreros and baskets and mexican looking things and a with a few shelves and a lovely variety of products, most of which I have no idea what they are. The owner is very charming and chatted to me for at least 20 minutes and gave me tips and all. On Thursday there will a Maya fair at the docks in Yafo and a chef from Mexico will also be there. I would so love to go but can't!!!!!! SO here is what I did/learned today: (Oh, I have NO IDEA if I did things right-thickness, thinness etc...)
  6. I once bought the most perfect brittle- If I recall, it had sesame seeds, almonds, salt, pepper, and something spicy-like with a bite to it. I do not get obsessive hardly ever, with a food, but this, I just had to have another one-all the time, until there were none left.I need to go there and get more. I will take a photo and analyse it so we can make it!Delicious!

  8. Hi We cannot get hominy here at all!!! I will look up what tamales are... In the meantime I found a store called Tres Pesos that carries all sorts of Mexican products-including the masa harina and corn flour Minsa or Minessa or something like that (??)in extra white-whatever this flour is... SO I will look up a few recipes and then go there!! Yaay!!
  9. Thank you both very much!! Yes, I read all about the nixtamalized thing-very amazing. I know that when the Maya made their cacao drink they often mixed it with this masa harina to make it thick and this process makes the corn healthier and all. AMazes me how ancient peoples find these things out... ANyhow, I will also check with the specialty stores for cooks-none are near me which is a hassle, but do-able at least...An hour's drive, which is not the end of the world! I wanted corn as then I can eat it as well... Thanks!XX
  10. After a bit of research I decided to start with making my own corn based tortillas. I went to the health food shop, the supermarkets etc to look for "masa harina"-fine ground corn flour processed with lime... No such luck. If I dont find any, can I replace with regular corn meal or the fine powdery white corn flour?

  13. I am quite new to Mexican food. I dont know what most things are (masa, differences between quesadilla and tortilla etc). I made a recipe about two weeks ago that appeared on our TV, called tamale-I used canned corn (sorry)and blended it with butter, egg and corn (gritty) flour and baked them in muffin shapes. Over this I had a "southwestern sauce and a tomato salsa and some sour cream as well. It was very popluar although the corn cakes were a bit heavy... Anyhow, what should I start with for the next meal? If possible, no wheat flour and vegetarian. ANy suggestions and easy recipes? Thank you!

  15. Here: BTW. the slider-ruler slides to where I want it. It is a tight fit so it does not jiggle after I leave it in a certain place. This way you can also make two different kinds of ganache in one tray.I place the ganache tray onto another tray, like this one for example: You can slide the ruler/slider to any position: A crunchy ganache:
  16. I have decided that caramek rulersare not convenient. I cannot manage them no matter how many times I have tried. I like to be able to give a knock to flatten out the ganache and remove air bubbles. My rulers are from CW, they move around, even after I "glue" them down. I had a tray made with an attached slider-works very well for me. I will get a photo of it. Being that I am not a big production at all, the rulers are too big for me as well even though you can make a small area-the rulers stick out way to much. I have a few different heights as well. Bob, you bon bons look devine-I also love your orange ones.Excellent and professional work.
  17. I even smaller than you guys here. Much. I use 2 6kg mol d'art melters, and 2 X3210 "tempering" machings from chocovision. Works perfectly for me in a variety of combinations. I can keep melted choc in the melter-not tempered and as I use tempered choc from the machine, I replacce whatever I use with untempered from the melter and then add choc to the melter and this can go on for eternity!!!
  18. I always put in fridege as it is usually hot and humid here. I suggest trying in and out and then we can all hear the results! |Should be an interesting experiment. Good luck!
  19. THE EYEBALLS ARE FANTASTIC!! I also think I could use green apple caramel for our holiday season! Beuatiful work. Bob-I like your dark sparkily ones a lot! This is what I had for our new year season-apples and honey.
