I'm sorry but I can't imagine a restaurant other than a small mom n pop's that would be that interested in what (to anyone not knowing the particulars of your situation) would be a minor snag in someone's clothing. Did they know it was your anniversary? If so, that's probably why the comped dessert more than the sweater.
  3. Oh, there's no question in my mind that Amanda means well and is a pleasant and nice person. I genuinely like her and wish her well. In fact, my high opinion of what she can do is the source of any criticisms I might make and have made in the threads cited by Suzanne. Well, that and some things are just silly and funny. It certainly would be nice if more authors took the time and cared as does she.
  4. Well, sometimes a few seared sea scallops or a grilled u10 shrimp instead of the lardons. Or a mound of creme fraiche with salmon roe. But the bacon is pretty tasty. Caldo verde (with chorizo) is great. Also, roasted smashed fingerlings in a broth of reduced white wine, cream, and butter with a good dose of pepper can be lovely. Then there's the whole range of great potato and fish soups.
  5. Perhaps you might want to try cooking from his books soon? Egad. Time and experience such as Fisher had however might give Amanda's opinions a bit more heft.

Sweat leeks, add peeled Yukon golds cut into small pieces, cover with chicken stock, bouqet garni wrapped in leek leaves and heel of old parmesan, season, simmer until done, remove garni and heel, puree, pass through sieve, add kefir or buttermilk and butter, whisk. Serve topped with lardons, deep-fried leek strips, and thyme.
  7. Cusina, your generosity of spirit towards this volume far exceeds that of many, including myself. Sorry about the tart. edit: To be clear, I was referring to the peach pie.
  8. Paula, that's a very good idea. Stone, I've done lambs tongues (boiled, cleaned, sliced) in a basic curry (caramelize onion and tomato, adding water and reducing with a few stalks of lemongrass added, toast spices, add to onion and tomato, coconut milk, add tongues, simmer, remove lemongrass, add lime and season) topped with mint and pomegranite seeds along with "frites" made from gram (chickpea) flour. Was quite popular. I've also made teeny tongue sandwiches with thinly sliced rounds of baguette with mint chutney and watercress. Thinking of doing lambs tongues with mushrooms as a gyoza filling as I've found a shop that regularly has a good supply.

    Pleaae try your local German or Mittle European delis and ask for liverwurst made in-store.
  11. Meat loaf (polpetone). The thought has risen and fallen over the last weeks. Soon, soon.
  12. I prefer broccoli stems. In fact, I prefer gai lan, Chinese broccoli.
  13. Slow braising: chuck, blade, osso bucco, lamb shanks and shoulders, pork curries, pork belly. Duck. I find that I rarely do duck in the summer. Prime rib. Scalloped potaoes, pomme Anna etc. Thick fish stews and mounds of colcannon or champs. One hundred thousand things one can do with cabbage. Caussolet. edit: And a wee bit of bacon.

    Peanut butter and Indian lime pickle is awfully nice. Some left-over duxelle with Normandy cultured butter on toast when one has some.

  24. I know that some people claim that urine has medicinal properties and consume their own. Others urinate on their feet in the shower to kill fungi. I have no doubt that the infant's urine was harmless. In fact, I personally loathe turkey and would rather eat feathers. So with that out of the way, I would probably toss it. After all, it's turkey. The infant on the other hand was, what, how many pounds? ..... /kidding, dear
