  1. I made my first meal in my tagine last night! Paula's "Lamb tagine smothered in onions". Had to substitute beef and romas but still tasted wonderful and the aroma while cooking was mouthwatering! Still soaking up the oil this morning. Going to try the teada recipe later this week. Guess it's a good thing I can't get onto Tagine's site, mine looks lonely and probably needs a friend, or two!
  2. Peanutgirl....I copied down your recipe. Thanks. I'm still rubbing oil into the tagine, over 1 cup now! How much do I rub in? After the oil and ash bake it turned out the most beautiful color, a real dark terra cotta. It almost matches the floor tiles! Do I keep rubbing in the oil until it won't take anymore before I can cook in it? I'm dying to use it but don't want to damage the pot. BTW it has the most wonderful smell, real earthy.

  4. I totally agree with you. I look at my stainless and it emits a cold impersonal feeling, the cast iron and clay have an inviting warmth and the promise of a wonderful meal. I believe that cooking is the essence of culture. Without women being adaptable, inventive and possessing the desire to feed and nurture her family, culture would not have survived. There would be no electricity, technology and heaven forbid no indoor plumbing! My husband rant and raves about the invention of the gas engine. I glance at my sand pots, grin and ask him what he'd like for dinner!
  5. Bumping this again....the big brown truck delivered my tagine today! I still can't get connected to their site but my son was checking for me so it all worked out fine. It's kind of crooked and has some dings and dents in the sides but it's exquisitely beautiful! is it ok to drool over a cooking vessel? I'm soaking it now and it will have overnight to dry and then it gets the oil and ash rub down. I thank each and everyone of you on this thread....I'm in love with my tagine and we've just met!
  6. Still can't open the page. I keep getting that alert that says the site cannot be found. Guess it's time for my son to come home for a visit and check out my computer!
  7. I love this topic. I was just wondering if anyone was having trouble with the tagines.com web site. I've been trying to track my order and can't get to the web site. I have also tried to access it through Paula's web site to no avail. This has been going on for two weeks now and I want my tagine, or at least to know if it has been shipped! Thanks for your input.
  8. I will enjoy following this topic. I love my DO which has been used for many years. I have recently acquired some sand pot casseroles which I have used as I would the DO. I'm not sure if I can tell much difference in the end result but I sure enjoy seeing that pot sitting on the stove top cooking away! It also gives off a wonderful aroma, food mixed with clay smell. I have ordered a tagine but it's still on back order, ugh! I simply enjoy cooking with a variety of cookware. I will quote Paula Wolfert, "there's the adventure of ingredient, the new spice, the new grain....There's the adventure of the new pot..."
  9. I have always placed them horizontally but at the top of the placesetting, they are too long to place vertically and they look funny! Rice bowl on the left and soup bowl on the right is similar to our "proper" table, solid foods are placed on the left and liquids are placed on the right. As another lefty, I've never had any trouble using chopsticks, the best way is to pick them up and use them, no photos or instructions! That can be confusing for a lefty! Changing light bulbs is still a bit of a challenge, can't tell you the number of bulbs I have broken off in the lamp....
  10. I do all that scraping too! Waste not, want not! I even wash out plastic storage bags and reuse them. Foil is sometimes washed and folded for future use too. My parents were depression kids, Mom's family had to move out to the farm and live with her Grandparents as her dad lost his job. As posted above I'm turning into my Mom and sometimes my Grandmother!
  11. That looks wonderful. Peas would be a nice color addition. These pictorals are very helpful. I always did learn better through pictures!
