Did Alice Waters Make it Okay for Female Chefs?
butterscotch replied to a topic in Food Traditions & Culture
I'm not seeing any evidence form you that AW was more influential, wasn't that just your opinion? I am not sure how anyone would think AW was as widely influential as Julia Child was, perhaps we could compare their Q ratings. But if you can't agree JC was a chef, even though she does fit the standard defiition, it becomes a moot point. -
Did Alice Waters Make it Okay for Female Chefs?

I always understood that anyone who cooked professionally, which Julia Child certainly did, earned the title of chef. If she called herself a (or is it The) French Chef, I am surprised here anyone would want to quibble with her on that. She worked at a higher, much more professional level than any other women depicted in the kitchen at the time, and I think she did a lot to inspire women that they could do the same. She had a big inspiring career in food, to imagine that didn't inspire women in any way except to stay home, seems pretty narrow to me. There weren't a lot of great career models out there for women at the time, but I'd definitely count her as one of them. -

Julia Child. Maybe she didn't open her own place, but I still think of her as the first female chef of true renown. -
CSA= Community Supported Agriculture. you pay a flat fee to a farm, and get produce all season

if you want hip and rooftop the Kimbelry Hotel ( 50th / 3rd) has a fun bar on it's roof. It has indoor and outdoor seating beautiful views, and a retractable roof.

Early Bird Granola is incredibly addcitive and holds up very well in milk. Locally made in smll batches weekly.... always very fresh, not too heavy or sweet. Made with olive oil, maple syrup and a bit of sea salt. I can't stand eat any other brand since I tried it last year, they taste stale and heavy to me. . I love the Farmer's choice with pecans, but the other flavors are popular around our office too.

For an Irish Whiskry, Powers is very underatted and reasonably priced. A float of water shows off it's smooth flavor, lots of butterscotch but not too peaty if that's your thing. Their 12 year old is nice too, but more for sipping.

a little salt is nice with marshmallows. i made brown butter crispie treats and the bit of flakey salt I used helped take the too sweet edge off them. Hale Mon is an excellent smoked salt- I love it on fruit!

i brush walnut oil lightly on bread to make toast, add some cheese or good chopped chocolate and flakes of salt, broil to melt.

the only advantage they provde is a good light source and consistant watering. but not all herb like the same amount of water, so with some research you can do a smarter cusom set up yourself. And not have the complicated scum ridden machine to deal with. i have heard a mix of flourescent and the "natural daylight" bulbs work well. you could get a gorgeous copper tray and pots that you actually like the look of too. Prettier cheaper and worlds more flexible in terms of what you are planting.

Food Foolishness: Why Make it When You can Buy it?
butterscotch replied to a topic in Food Traditions & Culture
I had to find the recipe (not Acme;s see Maggies correction below) too! and I did- so here is a nice tutorial on it http://www.thecookbookchronicles.com/blog/ -
no they will collapse. but you can keep the whites seperate unwhipped and mix the rest the day before, and whip and fold them in the last minute. also if there's other leavening, that should go in later too.

I have the simple human slide out in my cabinet. It is lidless, so it can get smelly in there when you open the door if you leave food scraps in there too long, so I don't. Got it because the cats were getting into everything else I ever tried. I think it also comes in a two smaller can version, so you can use half as recycling or compost. Very sturdy, easy to install, love it. BBB and beyond has a good selection, and you have those 20% coupons, so not too pricey.

Ive made the browned butter ones with chopped pecans and pony of bourbon heated up to melt the marshmellows. good stuff

whoa, these sond really good. going to try this soon. -
Some of the challenges on Top Chef were always lame, there was always also lots of product placement and kissing up to the sponsors. It's an equal playing field, no one was tying one hand behind your paticular back. It's about rising above. I'm still not wrapping my head around why you thought the whole nature of the show would change just to suit you. And is seems Egullet gets thrown under your bus as well, we should stop talking abot the show or you'll be off in a huff? I hope you're not packing your tools and going. It all could stilll be looked upon as a valuable experience, instead of yet another dissapointing one. BTW I've had hundreds of bowls of Breyers Butter almond in my day, and never a single ice crystal. And I made kick ass sundaes with it. You're probably much too young to know this, but back in the day it had better ingredients and flavors than any other commercial product out there.

But you would have been smarter to assume they'd show whatever drama they had over the cooking skills every single time, that's kind of a given if you've watched the show before. Im just saying you gave more and louder drama, including in the group shots, to the extent that they's have to rename it the Seth show in order to give a balanced portrait of you and show the good. Also it seems you didn't notice or care how badly disruptuve and negative your behaviour was, and that lack of respect towards the entire group/ show itself factored in as much as your health in their decison to let you go. If you hated it ll so much and it effected you so badly, why would you want to stay anyway? It appeared (at least at some moments) you were pretty contemptuous of the whole thing. Like you were shocked their was sponsors products to deal with, I had to wonder- had you ever seen the show before?

Your skills were not showcased because you gave the show a whole lot of other footage which they found more compelling. The snorting, boasting, arm waving and snotty remarks were pulling the focus to you in all the group scenes as well. They couldn't make the show all about your triumphs and your breakdowns, as facinating as some might have found them because there were other equally deserving contestants. I hope you can get some help dealing with the anxiety and that things with your Mom improve. I have been in your shoes and gratefully, no one filmed it. Perhaps the next time you are given an amazing opportunity you have the presence of mind to feel some gratitude instead of playing the victim and also to realize it's not all about you all the time.

Yep and when he failed to make everyone pity him enough he turned ruthless. Ironically his awful personality is probably what saved him. His creations certainly didn't, they were awful!

What was he, new there? Seriously, I'd call speak to the manager to let him knowwhat you 'd like to buy. Preorder, so to speak. If that doesn't work, there;s plenty of other bacon out there. These kids need to leavn some manners- Screw being treated like that!

What's good around the Empire State Building/Herald Square area
butterscotch replied to a topic in New York: Dining
For small quick bites I love the Craftwich kiosk in Herald Square. For much bigger bites or awesome drinks and snack etc, there's the Breslin as the Ace Hotel, as well as the lobby bar. And they also have a branch of Stumptown there as well. -
I have to try these!
