For me, ginger tea is coins of peeled ginger, lemon peel, and honey simmered for a while until I feel like the ginger taste is strong enough (so it will vary depending on volume of water/amt of ginger). Some fresh lemon juice added to the cup before drinking. Last time I made a large amount and reduced it quite a bit with sugar to make a ginger simple syrup which was really nice tossed with citrus segments.

  2. mmm, gingerbread. Around Christmas time Whole Foods was selling squares (individually wrapped) and I enjoyed it plain for mid-morning snack with tea. I have several varieties of herbal tea in my pantry which contain ginger (mango/ginger, lemon/ginger, ginger/maple...you get the idea). Carrot ginger soup is also a favorite of mine.

  3. Trying to be better about not letting things languish in the freezer...breakfast was "planned-over" roasted garnet sweet potato reheated in office micro. This is becoming a favorite for these cold rainy days.

  4. I drink herbal tea all day at work, so for convenience I am using prepackaged bags from Celestial Seasonings, Yogi, etc. I will brew ginger tea as posted above when I am home with a cold. My current rotation from Celestial is Vanilla Spice and Apple Cinnamon (everyone near my office comments how they crave apple pie when I have this). From Yogi tea I am enjoying ginger mango. In the summer I will be more likely to lean towards less cinnamon...ginger/lemon, peach, etc. 

  5. Baked eggplant and chicken parm casserole. Bought pre-made eggplant planks (made locally, very good, panko crumbs), cooked a few chicken tenderloins simply with s+p and sliced garlic, cut in to pieces. Layered in a dish with sliced canned artichokes, simple tomato/basil sauce, parm, topped with plenty of mozzarella. Served with some tagliatelle, also locally made/fresh.

  6. Roasted salmon fillet after dusting with 5 spice and a brush of hoisin, sugar snap peas, packaged lemon pepper flavored “rice” made from veg (chickpea and lentil flour mostly). 13 more hours until my physical and then I am home free. Not that I am counting or anything....😉

  7. Chick Fil A "catering" for the office...since everyone will eat it. Cold grilled chicken wraps, couple of salads w/grilled chicken, and platter of warm grilled chicken and fixin's (including bacon strips) for make your own sandwich. Supplemented with snack size chips and M&M cookies from the supermarket.

    I bought 4 at the grocery store on Monday.  They were hard as rocks.  They are now a bit softer...I'm hoping they don't go bad bad so they make it until Sunday.  Such  delicate balance between hard and rotten lol.

    Put them in the fridge when they hit perfect ripeness, they will hold for several days, I have kept them a week that way.

    I am torn, we usually make a big sheet pan of nachos and have ice cream, but I have blood being drawn Monday so I have to keep it healthy...maybe some guac with rice cakes😂

  9. No photos, dinner at home last night also. Pan seared tuna that I had briefly marinated in soy/lime/ginger, oven roasted broccoli and garnet sweet potato (microwaved sweet potatoes until softened a bit, cut in to 1/2" thick circles, sprinkle of ancho chili, salt, and one drop of honey on top of each before roasting).

  10. Half of leftover roasted garnet sweet potato reheated in office microwave, scored and put a little butter, cinnamon, and squeeze of lime. Plus a couple of almonds on the side.

  11. Watched the Food Network while at the gym today and decided to make a simple recipe that Michael Symon demonstrated. Baked cod shakshuka style. I made it with scrod, doubled the red bell pepper, and tweaked the spices a little. It was very easy and tasty, served with riced cauliflower since I am trying to reduce carbs this month. I would make it again.
