  1. Couple of pictures of our setup at the FCIA - we didn't need the hotel's monitor - it was not much bigger than the computer screen.
  2. If your filling is a ganache - add 1% silk to it at about 28º C - and pipe pretty much right away. You should be able to back off even sooner.

  4. Indeed - everything gluten free, non GMO... Ruth and I had a good laugh over free range, uncaged crickets!
  5. I wanted to comment on what seem to be the latest thing at the fancy food show. It seems that everyone is making artisanal jerky. How did I miss that trend? Other things seen were sweetened condensed coconut milk and evaporated coconut milk. And of course cricket flower in everything. Smaller serving sizes also seems to be in style.

  7. Delta - business class - so that we had the extra luggage and extra weight. It may have been a meal - but nothing to write home about. Certainly not like business class on any other airline!

  12. To be fair - when I went to that site initially it took me to the Dedy guitar cutting frames - I really had to search around to find those ones. I'll bet a few of your other bookmarked sites might have them too but they might just be calling them something odd.

  14. Dinner tonight at Souvla. Greek 'meat on a spit'! Chicken sandwich and potatoes roasted in drippings. More potatoes in drippings. Lamb sandwich. Lamb sandwich revealed. Smitten modernist ice cream made with liquid nitrogen. Just around the corner from Souvla - checked it out before we headed back to the hotel.

  16. The look on my face has nothing to do with the fact that I didn't realize I was back to back with Tyler - just that I was eating bugs.
  17. And I took a little break from the FFS to go outside and renew my friendship face to face with Alanamoana - with whom I shared a room and a course with JP Wybauw back in 2007 or 8. A great eG connection day all around!

  20. Ubered on back to the hotel to pick up Chocolot and headed to Chinatown for lunch. Thanks to all for their suggestions - we were able to check eG and figure out which dim sum place to hit for lunch. Great Eastern was the choice. Way to much food - when will I learn. Fried taro. Green beans with XO sauce. Some sort of noodles. Spareribs. Duck. Steamed buns with BBQ pork. Har gow. Turnip pancake. Can't recall the name - but they are kind of slime rolls - but still delicious. Fried shrimp rolls Leek dumplings Potstickers. Custard tarts. There were leftovers to bring home.
  21. Alleguede and I headed back to the Ferry building this morning for the market. Stopped and had a good look at the chickens and porchetta dripping on potatoes roasting under them. Market was a little wet this morning - all the citrus was very tempting particularly the white grapefruit - wanted to make cocktails. Bought some dried peaches and persimmons. Hiked down to Fisherman's Wharf - the obligatory photo of Alcatraz. Must purchase a loaf of sourdough at Boudin of course. Dropped in to Cost Plus market to see what we could find - sadly these pots were not magnetic. Especially since they were $9.99

  24. Things brought home in our travels today - a big bag of bars given to us by Mark at Guittard. Chocolot talked him into giving her a few pounds of product for testing purposes. I got a couple of bottles of Red Boat fish sauce and three bags of Rancho Gordo beans - black turtle, Corona and Christmas Limas.
