High brix items don't usually show as clear a line - go for as thin a sample as you can, push down firmly on the little flap, and as Lisa suggests as bright a light source as possible. Oh yeah - turning the ocular can sometimes help as well - it's like a focus. -

It is confirmed that Renee from Chocolat-Chocolat and her husband will be joining us this year. They will drive down from Montreal on Friday - with any luck be able to join us for the show and tell, spend Saturday with us and join us for dinner on Saturday. They will head back on Sunday morning. If you want molds from Chocolat-chocolat best bet would be to contact Renee directly and I'll bet she would bring them along. She will be sending me an order before the event so they could be included with that as well I expect.

My plans on Saturday were to work 12 hours, come home 8 at night, getting my packing for heading to PMCA done - then heading out first thing in the morning. Breakfast with @patris, then the drive down to Lancaster. Attend the lecture this morning, then the trade show this afternoon - and get all my questions answered and samples arranged for the workshop. Dinner with @lancastermikeand his delightful wife. Here's what happened instead - Saturday was freezing rain - texted the doc who was to relieve me at 8 pm and asked if she wanted me to stay - which she was thrilled about! So the view above is what greeted me for my drive home yesterday morning. Since southern Ontario and upper NY state were pretty much the same my drive to Lancaster was not going to come off safely. So here I am at home - but it is giving me a chance to catch up on some paperwork for the workshop at least. But it does mean my hopes for some great samples is likely not going to happen.

It was quite fascinating to me though that when Flavio Federico in Brazil posted an Instagram video with his new EZtemper - my followers went up exponentially. Sadly it apparently costs around $3000 US for a Brazilian to import one between duties and taxes. A few enterprising Brazilians have had me send them to friends and family in the US and had them brought down or have picked them up. Here's a link to his post - Flavio's video on Instagram

Since I'm stuck here for the night and the weather seems to be keeping people away - I asked our volunteer to go out to the grocery store and grab me a container of heavy cream so I could make @tikidoc's cream scones. They set upon them like a pack of hounds. Managed to catch a picture before the rest disappeared.- 333 replies

First loaf got ignored in the CSO and got a little browner than I like (I usually tent with a bit of foil) - but I dropped it at the desk and 30 minutes later there was a heel left! Was not expecting to work 24 hours today - but the weather is so bad that I would get stuck in town overnight so I figured I might as well stay. Saves the other doc the nasty drive in and me the nasty drive home. She's the coroner on call tonight so she'll likely have enough work to keep her busy! Leftovers for lunch - I had some red thai curry left that I had made the other day - don't think I had time to post it when I was here last. Looked just like this but with rice under it.- 333 replies

If no one else takes it off your hands there - I will! -
So it can hold 6 canisters - the extra canisters I obtained are in two sizes 8 cm (like those with it) and 9 cm. You can put 2 of the larger and 4 of the smaller in there. That gives a larger capacity than the competition. A big container would be fine as long as there is room for air circulation around it. Plastic or glass is fine - health department might have an issue with glass and the set temperature may be a little different.

I've got the best wire strippers! Many fewer cuts than using a scalpel. Agree with the Marrette connectors - they make life so simple!
