  1. Rainbow Sour Kira is enjoying one of the pastries we brought up that were made by @Alleguede The same ones from the workshop - I’ve got private stock!
  2. Lunch from the Trough Buffalo Chicken Poutine for Anna Philly cheesesteak for me. No one says you need to eat the bun!
  3. We made a trip to the Flee Market this morning. Always good to catch up with the folks who work there. Any thoughts on what whoever welded the bit on the front of this might have been thinking? Here was our haul. I also saw an All-American Canner - looks to be about the 21 quart size. She wants $150 for it. I need to do one of three things - forget it, convince myself why I need it when I don't can anything that requires a pressure canner and I already own a total of 5 instant pots, or convince one of you that you want it.
  4. We've done a small spatchcocked chicken, about 6 lamb chops (not at the same time of course). It's not huge by any means. These days I'd get the mini max - it's the same size as the medium only short.
  5. You know this is the size we use when we are up north? Cost me $400 CDN as I recall without stand and I've picked up the better stand for it - it used to be in the ring stand that apparently had a tendency to let the egg snap in half and the bottom fall off.
  6. Try as I might I just could not get a really good picture of these ones. Anna and I have since figured that I needed to have HDR turned off on my iPhone camera. You wouldn't know it looking at these pictures but you could lose yourself in these ones. This was my second try making these - the first were pathetic - I was much happier with this batch. I took some video moving them around - it's rather funny watching it fall off my hand, me swearing and picking it up again.
  7. Temper meter used only on rare occasions for very specific tests - never used when I'm just working with chocolate on a day to day basis.

  10. Needs must - a Brother's Perryman should have a flamed orange rind. Lemon rind will do - and how you choose to flame it depends on the tools you have!

  12. Are you putting them in the fridge for a few minutes during the time they are rapidly crystallizing? That's when they are giving off the most latent heat of crystallization and might actually throw themselves out of temper causing streaks. Other than that they look quite striking though (and I don't think I would have even noticed those streaks had you not circled them)!

  14. Lunch was brought in to the lounge just as we were leaving Not sure all those gas inducing foods are a wise idea! A snack was served on the flight. Lost a pocket knife and a corkscrew to TSA both of which were in my carryon on the way down.
  15. Oops - I misremembered what you wrote - but I was not disappointed with the slices we got. I think the stuff we got in Penn Station was better but these were still quite suitable for middle of the night food.
  16. Indeed - presentation is everything - I'm anticipating that they will taste as good as they look. I particularly like the sealing wax.
  17. Slim to nil low carb pickins in the Maple Leaf lounge right now But they have a Lavazza machine for latte which makes a nice cup
  18. It was a million degrees out! Gotta say though - I suspect the worst NYC pizza is better than than the best chain pizza at home.
  19. Just opened the parting gift given by Valrhona - thought I’d share with you
  20. Awfully late at night - we weren't hungry when we walked home from the cocktail party - but around 10:30 decided we were. Following @gfweb's suggestion that you can never go wrong with pizza in NYC we hit the joint around the corner (Ray's) and grabbed a couple of slices. Also following advice - we picked up some Junior's cheesecake.
  21. My thought as well - I don't necessarily need a huge batch of something and less will be lost to the bowl.
