It’s huge! I didn’t spent much time upstairs where the chocolate vendors are but that was the largest part. World Chocolate Masters is there this year so you can watch the competition. Chocolate World will have their folks doing demos all day I’m sure.

Ooops - wrong reservoir - I thinking the drain one. Haven't had any in the goes in water. I'd likely soap and a bendable brush.

Thick and relatively cool - the way that chocolate gets when it’s sat too long in a melter

I'd start with the fruit and the sugar and when it starts getting too dusty - add some melted cocoa butter. I didn't need the heat gun - but might have been useful when things started to creep up the side and hardened there. I have an inquiry out to Melangers.com re the dishwasher.

Here are my purple dendrite studies. Some were dilute chocolate - other's black cocoa butter. Cocoa butter alone is fine - just make sure it's over tempered.

I've been corresponding with a hobby chocolatier in the Phoenix area who has been learning by trial and error and a good dose of Google and expressed an interest in spending some time with a local chocolatier in order to learn more. I'm guessing most shops might be hesitant to take in someone who they might view as potential competition going forward but I wonder if anyone has any suggestions? Perhaps even a situation where a couple of people, both anxious to learn, get together and support each other in their learning. So - hive chocolatier mind - any ideas?

Welcome @SuperawesomeSnowflake! That's quite the handle. I will also be at Salon - but not selling pralines so a different set of issues for me. I certainly know at last years Salon the folks selling product seemed to be selling a huge amount. The locals appeared to be bringing in cartloads on a daily basis. I know that @jmacnaughtan seems to know a number of the vendors and might be able to get some better information for you. PM me and I'll contact him if you would like and see what I can find out. Can you tell us a bit more about you? Where are you located? What product will you be selling?
