    Apparently when you ask how much booze goes in a cocktail it can sometimes be interpreted as the amaretto part rather than the booze part. Hence you end up with a cocktail with twice as much booze as called for. A very intoxicating and very delicious amaretto sour Going forward – I think all our amaretto sour’s will contain twice as much Canadian whisky as the bourbon called for

    Grinding with the melanger results in all the various particles in the mass become smaller and surrounded by cocoa butter. The sugars become amorphous so you no longer detect them as crystals on your tongue. You could try something like a Sumeet grinder (it's like a coffee grinder on steroids) but you will not get the same smoothness as you will with a melanger.

    A melanger will be required to incorporate those sugars and fix the texture. You’ll still get to cooling effect in your mouth from the sugar alcohols though.

    Was getting a picture of milkweed when I heard this guy buzzing from flower to flower. Perhaps a budding romance. This young man comes down to swim every night - usually heads off as soon as he's had his swim. Tonight stopped on the bench to chat!
