    Breakfast 2020!

Sunday Breakfast. Moe's. Farm fresh eggs, buttered basted, sausage and toasted homemade bread.
  2. Haven't baked in a few weeks. Ended up working 15 days out of the last 18. Baked last night. Dough had been in the fridge since Wednesday.

    Breakfast 2020!

I had a craving for ginger cookies. Not just any ginger cookies, but soft chewy ginger cookies with bits of Crystallized (Candied) Ginger throughout. So since I was up early I made a batch. Early morning treat with our cappuccinos.

    Dinner 2020

I made two batches of dough yesterday. A 1000g flour batch at 70% hydration and a second 500g batch at 80% hydration. Both went into the fridge yesterday morning and Matt took the small dough out this afternoon for me so the dough would be ready to make pizza with when I got home from work. Divided the dough in half and made two smaller pizzas, from one half of the dough, both the same, topped with olives, green peppers and thin sliced onions. One for Moe and one for our neighbours. I wasn't hungry, otherwise they would have been topped with mushrooms and Italian sausage. Used the other half of the dough to make Matt a larger plain cheese pizza which he finished with a crushed chili pepper. Rim shot. The other dough is destined for baguettes in the next day or two.

@BonVivant, I'm so envious of your Mexican meals. No good Mexican here on the Island. Dinner last night was just dessert. Apple turnovers with a brown butter glaze. Moe had his with ice cream. \

I know that feeling. Tasty looking wings. Last night was Taco Night. Hard shell tacos. An easy work night dinner. Made the salsa in the morning and just had to cook the beef when I got home. Ate watching the second half of the Game.

    Dinner 2020

I don't really care for fish (except Halibut) but Moe really enjoys fish so I made this dinner just for him. Stopped at the fish store this morning before work and bought Petrale Sole and west coast handpicked shrimp for Moe's dinner. Sole was baked in the steam oven and served with a mushroom and shrimp dill sauce. Along with roasted potatoes and steamed green beans.

    Breakfast 2020!

4:00 AM Decadent Brownie and Cappuccino time. What better way to start the morning.
  12. My kitchen is really small. I barely have room for the first one. The spare is kept in its box on one of the shelves we store the maple for our charcuterie boards.

    Breakfast 2020!

Those that know me, know I'm not big on leftovers. So today's breakfast (for Moe) and lunch for me, is unusual. I had saved the leftover filling from the chicken pot pies we had for dinner on Saturday and made Chicken Pot Pies with a biscuit topping instead of pastry. Filling was rich with cream and chicken broth and didn't taste at all like leftovers

    Dinner 2020

Darn, now I want oxtails. I had enough pastry left for a single crust. So I baked an apple crisp pie this morning before leaving for work. Moe had to look at it all day so he decided that was all he wanted for dinner. I made a caramel sauce to finish it off.

I knew that. 😊 @Owtahear Beautifully cooked steak. And roasted potatoes. I made chicken pot pies for dinner last night. Before leaving for work I poached the chicken breasts and then cooked the vegetables in the broth. Used the broth and heavy cream to make the sauce. When I got home from work, all I had to do was make the pastry and get the pies into the oven. Served with garlicky green beans. My favourite Chicken Pot pie recipe. I used the last of the Anson Mills Pastry flour I received in a Secret Santa gift.

@weinoo, I toss them in a bag with seasoned cornstarch, shake, most of it off, and bake on parchment paper at 450°F in the CSO on the Bake Steam setting. Turning once half way through. They don't need to be marinated. Yesterdays were seasoned with salt, pepper and cayenne pepper. Sometimes I rub them first with fresh garlic before tossing with the cornstarch. Cornstarch makes for the best light crispy coating.

    Dinner 2020

Thanks @JoNorvelleWalker. I went into Victoria yesterday for some shopping and before I left I asked Moe what he would like for dinner. His response was wings. So that is what we had. Platter for Two. Buffalo Wings with fries. Baked in the CSO on Bake Steam setting. I prefer the sauce on the side so the wings stay crispy.

@JoNorvelleWalker, would you please share your version of Chicken Cacciatore. Most recipes are based on a tomato sauce I prefer it without.

Last night's dinner. Grilled beef tenderloin Kabobs. Served with buttered Carolina Gold Rice, with mushrooms and zucchini.
  22. You are welcome. If I didn't already have a back up I'd be buying one.
  23. Six Sourdough baguettes. Fed my starter Saturday morning and made a biga. Added to a batch of dough Saturday night and was left in the fridge until this morning.
  24. Caynes in Toronto is going out of business and they have the CSO on sale for $159.99. That is the lowest price I have seen. This is a store I use to shop at years ago when I lived in Toronto. https://www.cayneshousewares.com/cuisinart/combo-steam-convection-oven-39624
  25. When I'm out this afternoon I'll pick up the citric acid and if that doesn't work, I'll take it apart following the instructions from @Shelby. I don't want to open my back up oven unless I have to.
