    @Dejah, no I very seldom marinade anything. They were presalted the day before and then just seared. Added back into the pan after the onions, garlic, ginger and spices, but before the liquids were added and tossed around to coat with the spices. Crushed tomatoes, and chicken broth added and then into a low oven to slow cook. I had planned to cook halibut for dinner last night and didn't. I picked up pizza from Pizzeria Prima Strada. We don't order take out pizza very often. But when we do it is from this place because of their wood burning oven. So once again Moe had dinner for breakfast. Seasoned and grilled the halibut and served with pasta in a cream based sauce with fresh tomatoes and fresh basil. Moe loved the pasta and said I can make that any time and he doesn't even need anything else to go with.

    This is a dangerous place to come to first thing in the morning. So many wonderful meals. And great photos. Last night's dinner. Lamb curry, using lamb shanks and Aloo Gobi with homemade Chapati and basmati rice.

    Baked two loaves of homestyle white yesterday and two buns. Stopped at the The Brazen Fork food truck in Cow Bay/Duncan and picked up a pound of their smoked brisket. Made brisket sandwiches for dinner using the buns.

    @Dejah, nothing special. Just make sure that the scallops are patted dry. Really dry. Then I just season with salt, pepper and sear in a hot pan with a little olive oil and butter. They take just a minute or so to brown and the same for the second side.

    Moe's dinner. He loves scallops so I ordered more from Walcan Seafood. This time Quadra Island Scallops. Bigger than the Hokkaido Scallops that he also loves. But equally sweet and delicious. Seared and served in garlic butter with fresh thyme and parsley and served with fresh lemon juice. Asparagus on the side.

    Last night's dinner, Green Peppercorn steaks. Needless to say, the plate without carrots is mine. Sugar Pie for dessert. Topped with whipped cream and toasted coconut.
  9. Started a batch of bread dough last night. First time I've used the Stretch and Fold method since the accident. Just 2 grams of yeast in a 1000g of flour at 72% hydration. Last baguette out of the oven just in time for lunch.

Last baguette out of the oven just in time for lunch. Made a pot of Stracciatella Soup using the last of my turkey broth. Love this soup.

    I love having these Hokkaido Scallops from Walcan Seafood in the freezer to cook for Moe when I'm not hungry. He loves scallops and I've never been a fan. Tonight's dinner was scallops in a cream sauce with mushrooms and gruyere topped with buttered garlic bread crumbs and finished in the oven. No recipe. Just winged it. Moe gave the dish 5 Stars.

    Roasted a turkey a couple of days ago and still had one breast left and lots of gravy. Made hot turkey sandwiches for dinner last night. That was the end of this turkey. I think I did pretty good considering I'm the one that hates leftovers. We had a traditional turkey dinner, three cold turkey sandwiches with cold dressing and the legs and carcass went into making broth and a pot of soup. All gone.

    Ground Pork

    Great thread. I some how missed it. I love ground pork. Especially in Chinese recipes. This crispy Pork stuffed eggplant is really good. My favourite meatballs are ground pork with basil and garlic.

    I still had a small turkey in the freezer, bought fresh for Christmas and then stuck in the freezer after the accident. Left it in the freezer to defrost and then presalted it on Tuesday and roasted it last night for dinner. All the traditional sides. Dressing baked separately, mashed potatoes and gravy, rutabaga and Brussels spouts. Moe had a roast turkey sandwich with dressing on white bread for breakfast and I'm taking the same to work for lunch. The carcass and legs are on simmering this morning for broth to become soup, and the remaining breast and leftover gravy is destined for hot turkey sandwiches tomorrow.

    Another dinner that didn't get made last night. Today's breakfast. Poached Eggs with Duck Breast . Finished with a green peppercorn thyme sauce. First time serving duck for breakfast.
  16. I went back to check and looks like I haven't fed my starter since the beginning of September. Two feeds and it bounced right back. I used 60g of discard from the first feed and made a 1000g batch of dough along with 1 gram of yeast at 80% hydration. 24 hour cold fermentation and then left out of the counter to warm up for three hours before shaping into 5 baguettes and one ciabatta. Sliced the Ciabatta while still slightly warm because Moe wanted a few slices with just butter.

    Dinner for breakfast. Small prime rib, presalted on Saturday and didn't get cooked last night. Moe loves scrambled egg and roast beef with gravy.

    I decided to try going back to work today. So dinner was simple. Made Moe a Spot Prawn and Avocado Cocktail.

    I had intended to roast a small Prime Rib last night for dinner. But neither of us felt like it. Moe thought that he would like fish. So I grilled a piece of halibut for him on a cast iron grill pan and I grilled pork chop for me on the gas grill. Same sides for both. Potato gratin and broccoli. Going to make him the prime rib for breakfast.
  23. I'm not a fan of fish, with the exception of Halibut. I love halibut. If fish is going to be finished in the oven, like the parmesan crusted halibut, regardless of pan, you only need to brown one side because once it is turned and placed in the oven, the other side will automatically brown. At 450°F, I find that 5 minutes is usually sufficient time. If the filet is really thick, a minute or two longer and if a thin cut, then a minute less. I do prefer my fish cooked and not on the rare side.

    @Margaret Pilgrim, Thanks for asking. Hard to believe that it has been six weeks today since the accident. Finally well enough to go out last weekend with Moe to look for a replacement car. Neck is still an issue so still wearing a neck collar. And I have an appointment scheduled on the 14th for a follow up CT Scan on head and neck. Hope to be able to get back to work soon. Going into town later this morning for my booster shot. I had it scheduled around the time of the accident and had to cancel two appointments.

    Three recent meals. Grilled Filet Mignon with mushrooms and garlic butter and oven roasted potato wedges. This was meant to be dinner, the night before, but ended up as breakfast yesterday. Chicken Soulvaki Cabbage rolls.
