  1. Started a batch of dough Friday night. 1000g at 68% but with just one gram of yeast. Left out of the counter overnight for a slow, slow rise. Was ready to start shaping at 4:00 AM. Last baguette was out of the oven before 8:00. This has become my favourite time to bake bread. I'm always up early, usually by 3:00 AM and don't have to be at work until 10:00.

    Honestly, Moe doesn't ask for much. He is happy to eat whatever I feel like cooking. I'm the picky one. But sometimes it is nice when he makes a suggestion. Especially one as easy to satisfy as a roast beef dinner. LOL. is that a bad thing?😊 I dare say that she probably thinks he's worth it. Everyone used to say that I spoiled my husband and now that I know what it's like without him I'd spoil him even worse if he were still here. Go for it, @Ann_T! @Tropicalsenior Thank you. Yes, he is definitely worth it. I've been loving him for 48 years and hope to be cooking for him for many more years.

    Put a pan of cornbread in the oven this morning. Served warm. This is my favourite cornbread recipe. Definitely not a low calorie version.

    @blue_dolphin Beautiful golden waffle. A couple of Moe's breakfasts this week. Made him a beef dip sandwich from last night's leftover roast beef. An I still had melon and prosciutto so he had that for breakfast one morning with baguette for dipping in the oil.

    Now that is my idea of dinner. Or breakfast. Dinner tonight. Cioppino with halibut, spot prawns and mussels. I wanted to add clams too but they didn't have any. I asked Moe what he wanted for dinner last night and he requested a roast beef dinner. With mashed potatoes and Yorkshire puddings.

    @JoNorvelleWalker, I never order just a 1/4 pound, this time I ordered ten 1/4 pounders. It is available in 1/4, 1/2 and 1 lb pieces. In the past I have also ordered it fresh and vacuumed packaged it myself. I still have at least three 1/2 pounders in the freezer. But I prefer to have 1/4 pound pieces in the freezer. You can order as little or as many as you want , and delivery is free on orders over $50.00. Best delivery service ever. They deliver twice a week down island and send a tracking link to a map, so you can follow the driver down island. I know within minutes when the car will be pulling into the driveway.

    Walcan delivered halibut to the door Friday. I've started ordering it in 1/4lb pieces. Perfect portion size. Made Parmesan Crusted halibut for dinner last night. With roasted potato wedges.

    @weinoo great sear on the scallops. Last night's dinner. I promised Moe an Antipasto platter for dinner. Just had to basically marinate and grill the vegetables when I got home from work so dinner. And I made him Seared Hokkaido Scallops served in a garlic cream sauce with lemon over spaghetti for dinner on Thursday night.

    I slow roasted a capicola pork roast yesterday for dinner. But we never had it because we picked up some take out for a late lunch while we were in town. So this morning I sliced a little of the roast and made gravy from the drippings (nothing is better than pork gravy) and made Moe a hot pork sandwich for breakfast. This should keep him going until I get home from work.

    Thanks Kim. Your beef is perfectly cooked. Mouth is watering for roast beef now. I baked an Apple Peach Pie this morning. I don't usually do combination pies, but I had some peaches that were perfectly ripe, but not enough for a pure peach pie................ .............so Apple Peach it is. It was intended for dessert tonight, but I think it is actually going to be dinner. ETA: With or without.

    Baked cocktail size bagels this morning and we had them tonight for dinner with Smoked salmon and cream cheese.
  12. Great crust and crumb. Today's bake. Moe reminded me that I hadn't baked bagels in a while so I did. Cocktail size. Perfect size for serving with smoked salmon and cream cheese.

    Not the best photo, but a tasty and quick work night dinner. Petrale sole over spinach with a lemon butter sauce and roasted potatoes. The potatoes took 30 minutes in a hot oven to roast and both the spinach and the Petrale sole took less than five minutes.

    I saw your wonderful looking soup on the CF. Looks delicious. Moe said I hadn't made Halibut fish and chips recently so I made them for dinner last night. Light and crispy tempura style beer batter. Twice fried fries. Easy work night dinner.

    Moe wanted a tomato sandwich for lunch. Sliced one of the boules baked this morning.
  18. Baked 8 baguettes and 8 small boules this morning. Last boule out of the oven before 8:30 this morning. Started two Bigas yesterday morning. Each the same. 220g of flour, 220g of water and 1g of yeast. Last night, I made two batches of dough. Each with a Biga and 1000g of flour, 650g of water and 30g of salt. The baguette batch had the addition of 1g of yeast and the boule batch was just the Biga. Both left out overnight for a slow rise. Interesting, the batch with just the Biga was a slightly faster rise. I put that bucket outside around midnight to slow down the rise. Brought it in after the baguettes were all shaped and almost ready for the oven. By the time the baguettes were out of the oven, the boules were almost ready to bake.

    This was suppose to be Wednesday's dinner. BUT instead it became Thursday's breakfast. I offered Moe the option of hot chicken sandwiches for breakfast or dinner and he choose breakfast. I had the chicken breasts in the oven before 4:30 AM. While they were roasting I cut the potatoes for fries and let them soak in cold water for awhile. While the chicken rested, I used the pan drippings to make gravy and double fried the fries. I had the same for lunch, took everything in separate containers to heat up at work.

    @blue_dolphinI would love your breakfast. I'm not a fan of maple syrup on my French toast either. I had half a slice of Moe's before he drenched it in maple syrup. I just buttered mine and sprinkled with salt and pepper. Moe's breakfast. Made French Toast from the homestyle white bread baked yesterday.

    Didn't know what I was going to cook for dinner tonight. Offered Moe a couple of options, of which green peppercorn steak was one. So that is what we had.
  22. Decided this morning to make Homestyle White. Three different sizes. I don't make this often but Matt loves it for sandwiches and French toast. Sliced one of the loaves while still warm and buttered it for Moe.

    Pulled my favourite Italian Sausage and Rosemary sauce out of the freezer and we had pasta for dinner.

    Toasted baguette with back bacon and sliced tomato. Tomatoes out of our garden.
  25. @Anna N I'm always amazed at how quickly the starter bounces back. Just seems to lay dormant until it is fed again. Today's early morning bake. Started a Biga yesterday morning before leaving for work. 220g of flour, 220g of water and 1g of yeast. Added it to 1000g of flour last night, along with 680g of water, 1g of yeast and 30g of salt. After the last stretch and fold, I put the dough container out on the porch. I wanted a slower overnight rise and it was the perfect temperature outside. Dough was ready to go at 4:00 AM. Divided into 8 pieces and loosely shaped and left for 50 minutes before the final shaping. Left to proof. Started each baguette in the CSO on the Bread steam setting and after 12 minutes moved the baguette to the main oven to finish baking. Doesn't take long to bake 8 baguettes with this method. Last baguette came out of the oven just before 8:00 AM Sliced for breakfast.
