  1. Oooh, scalloped potatoes. How could I forget? Potatoes AND cheese, together.
  2. As mentioned above, made from scratch baked mac & cheese would top my list. Also baked ziti, freshly baked bread or scone with some homemade preserves, or a big pile of buttermilk mashed potatoes (and whatever else is required to make a meal of them).

    Thanks everyone! Kim, between this thread and your baking posts, I am consistently blown away. I don't know where you find the time! Tonight was just a simple grilled cheese sandwich with whole grain mustard... And yes, I ate it with ketchup. Don't judge me.
  4. Really? That's interesting. I've never thought to try anything other than all-purpose (unless otherwise specified). I've always assumed that flours named the same would be the same across the border.
  5. Finally got around to making a smoothie that I'd mentioned upthread. Combination of ingredients shamelessly stolen from a neighbourhood smoothie bar – it's banana, papaya, raw almonds, medjool date, whey powder and soy milk. I just winged it for quantities and think I will adjust a bit to get a thicker and less sweet smoothie. I used about 1 small banana, maybe half again as much papaya, 5 or 6 almonds, one date and approx. 1 tbsp of unflavoured unsweetened whey powder, plus enough plain soy milk to make a smoothie. That one date sweetens it considerably, so I think I'll try a half a date next time. I'm also going to increase the amount of fruit to thicken it more. Definitely one I'll make more often.

  7. I'm inclined to agree with Anna about publishing tested vs untested recipes. However, I would be willing to volunteer my time to the project. I'm a graphic designer/typesetter by trade.

    Oh man, I'm so sorry to hear that. I broke mine a couple years ago so I can empathize. I still remember struggling to even open a can one-handed. *sigh* Get better soon! prawn, that all looks fantastic. I'll bet your vegetarian friends were very happy. It's cold and rainy and blustery in Vancouver today (we may actually be getting some snow on the mountains – just in time for the paralympic games anyway!), so I decided to make a pot of chili. I'm vegetarian, so that means a whole lotta veggies... and of course onion, garlic and jalapenos... I never have issues with peppers bothering me when I cut them. Usually. I think I got a super potent pepper because my fingers were burning. Thank goodness for the internet – I've discovered that a baking soda & water paste will clear it right up. In addition to the jalapeno, there is also chili powder and chipotles in adobo sauce... Add two kinds of beans... and a bunch of other stuff, and finally we have this... The white blob is feta cheese. Excuse my photo-happy post – I just got a new camera and lens and wanted to play.

  12. I only ever make breakfast on the weekends, and it's usually more of a brunch. I'm just trying to get into photographing my breakfasts and dinners to post here, but they're never very exciting. Today I had a couple eggs scrambled with tomato, feta, and some leftover couscous (really, there was more couscous than egg in this dish)...

    Tonight I made a vegetable tagine with cous cous (from One Dish Vegetarian Meals)... This is the first dish I've tried from this book, and I'll definitely be making it again. Can't wait to try some others.

    Mmm, that curry looks so good I had to just order a copy of Lord Krishna's Cuisine for myself. (and this is why I've been spending so much time in the how many cookbooks do we have thread)
  16. The same thing happened to me the last time I made a cauliflower gratin. I wasn't following any recipe - I just winged it – but the sauce was beautiful before it went in the oven. It didn't separate into oil and solids, but seemed watery and grainy. After reading this thread, I'm inclined to blame water in the cauliflower (which I steamed briefly first).
  17. You can tell which cookbooks I actually use by how spattered they are. My copy of Dorie Greenspan's Baking From My Home to Yours has several pages stuck together, and if I'm not careful when picking it up and opening it? Flour everywhere. The only cookbooks I have that are pristine have never actually been used (and I do have several that I've bought just because they're so pretty – Donna Hay, I'm looking at you).
  18. I always keep a few cans of coconut milk on hand for use in curries or baking, and I regularly have it frozen in ice cube trays for use in my morning smoothies. I also quite often buy coconut water, also for use in smoothies (in lieu of juice).
  19. Bummer! I'm lucky in that I have several big donation bins in my neighbourhood, two of which are for books. How about listing them on freecycle? Or put the entire collection up on craigslist for pick-up only. Some poor sucker will probably be only too happy to get the lot.
  20. Can you donate them? I've never looked into it, but would schools be interested in cookbooks?

    I think this is the first time I've thought to photograph my dinner for this thread! During the week, my meals are quick & dirty. Tonight I just scrambled a couple eggs with some leftover stirfry. This is one of my favourite ways to use up leftovers and give them some new life.

    Salty Snacks

    Are they a Canadian thing? We have them here in Vancouver, and I remember them from my childhood in small-town BC. Every once in awhile I'll get nostalgic for them, but I can only have a few before I hit cheezy overload.
