  1. Guessing he didn't want to break down clean and sanitize the slicer so he could continue to serve cooked meats....just guessing and assuming it would have been the same slicer T

Ahhh the giant plastic wrap that you just bump your bowl etc right against and can wrap over and under and around in 2 seconds flat...even better with the slide cutter installed on the box, I miss counter space. And that sweet kid from work that followed me around with a broom, I loved the look on my mothers face right after I sliced some bread at her house and swept all the crumbs on the floor with my arm Exhaust fan huh? Yeah I could use one of those... I would really just like a tiled space that be hosed down tracey
  3. Get the grill hotter...and thats probabley too long in the marinade, it can make them mushy I also like boneless thighs for grilling (more forgiving of a moment of overcooking) tracey
  4. Years ago I started noticing a smell in my freezer...I have no idea why it was strongest in there and not the fridge. I dug through things looking for the nasty bits but really wasn't finding anything. I knew there were oranges in the veg drawer and eventually thought that if I cut them up their lovely smell might help....of course they were what was rotten T

  6. Being a family of 2 with a dishwasher...I have multiples of many things. At least 4 pairs of Tongs, 3 or 4 spatulas/turners, same for silicone spatulas/bowl scrapers. I do have 2 grinders and would love another mixer bowl at cookie time. I am fortunate that my husband and I came into this with the same set of small pots so we have doubles of 1qt, 2qt, and 3qt. tracey

    "tesa" means stretched, or taught, indicating it's flattened, nor rolled. Yep. We normally make the rolled version ("pancetta arrotolata"), but wanted to see how it would do flat. We also normally cure in our meat-curing fridge, but dried the tesa in our regular fridge to see how it would do. Pretty darn good, it turns out. It isn't as pretty as a nicely rolled batch, but it tasted great, was very simple to do and required no special equipment. I am so happy to have a name other than...Well it's just like Pancetta but I didn't do it exactly the right way. I didn't have the nerve to roll mine and dried it flat in the fridge tracey

  9. The only fish I really buy to cook at home is Salmon...it seems to be the only thing that really moves in the local supermarkets and usually looks freshest. In the past year I have bought catfish fillets, dry packed scallops, and tilapia. I used to have an Asian market that would "let" me buy the narrow end of a Tuna side as a roast, it was great to sear and serve cold and they had to cut it off a fresh side from the cooler when do we all start eating Big Head Carp? tracey

I was just harrassing a former boss to make our old Grilled Chicken Wild Rice and Lentil salad...It has Wild rice French lentils sauteed diced onions grilled chicken breast diced and roasted sweet potato diced the dressing has apple cider vin sugar S&P and vegetable oil I like it best on the second/third day..the lentils really soak up the dressing It is also great without the chicken tracey
  12. Thats about it...I used thinly sliced garlic and crushed dried Thai chilis. I usually warm the oil with the garlic and chilis when I start the pot of water and then let it sit until the spaghetti as almost cooked. Tops with fresh parsley and cheese. one of the first things I learned to cook...after scrambled eggs of course tracey

  14. Thanks ladies keep 'em coming, neither one of has ever been to California. After going to college 20 miles from home she suddenly decides to go to grad school 3000 miles away. Her dorm is the former Oakland YMCA now Webster Hall, the literature says it is near the Lake Merrit Farmers market but she won't have a car. Hey what will be the easiest place to go stick my toes in the Pacific when we get there? LOL
  15. None of us here are the type to back down from a challenge, but that type of food is the most time consuming and difficult to prepare. You are talking about over the course of 3 hours needing close to 2500 individual pieces. Could you see peeling, cutting, filling and transporting half a case of eggs as a begining. Wouldn't they much rather a nice BBQ feast tracey
  16. Hey All My daughter is moving to Oakland next month to attend California College of the Arts, and as you might guess she is a bit of a foodie. The only problem will be she will have almost no income. She will have access to a shared kitchen at the dorm and will also definately want to try out some of the local "specialties". Any suggestions for her...or invitations to dinner ? I will be joining her for 3 days in August also tracey
  17. Now that sounds interesting. I have done it more myself before but I guess I am surprised it would work for a crowd. Is it a traditional dish in your circle? Tha macaroni was a last moment addition and when I asked my husband if we needed it he requested the tuna version. I was lucky it was early enough to creat an ice/double bowl set up for it. Everyone seemed to take some, there was enough left for a late supper on the 5th after my mom's bbq : )
  18. We had 14 guests for the 4th and I got everything done ahead On the 3rd I smoked a brisket and a small pork shoulder, after 8 hours they got wrapped and put away. Sunday morning they went into a low oven and I made cole slaw, tuna macaroni salad, black bean and corn salad, baked beans with double smoked rib ends and set salsa and chips up. Guests brought...roasted pepper hummus with carrots and peppers ( I added some garden green beans) 2 apple pies, 1 cherry pie, and a chocolate/graham cracker refigerator cake Soda beer and coffee rounded things up and we kicked the last of them out at 1:15am tracey
  19. The burger I had at a new Sonic in NJ was...Fine... the lettuce and tomato were very fresh and quite cold, so cold they promptly made that side of the burger cold. The jalepeno poppers were serviceable and they have Tater Tots. Haven't been back tracey

This isn't the first time I forgot the dasher in the icecream maker before pouring some of the mix in...but today is the first time I could't find all the parts Aaargh I stuck my hand mixer whisk in there for a few min then transferred it to a freezer container and I guess I will stick the mixer in there every 20 min or so hopelessly yours tracey Update 20 min later...I am guessing I should't bother changing my shirt until this stuff is done....I did wipe off the ceiling though. Mix whats left again in 20 min
