  1. The incomparable Daniel Rogov posted his recipe for chicken liver pate here: it's the one I use, and it's great. I'll saute the livers till they're cooked through but not dry, and use lots of butter both during the sauteing and after the whole mix has been mashed/processed. I'll also throw a few whole peppercorns into the pan while cooking and process them as well at the end.

  3. The New York Times published a great article that Lucien K. Truscott IV wrote about 2 or 3 years ago about cooking pancakes for his daughter's breakfast before school. He and his wife experimented with recipes until they found one passed down through his wife's family. They coined the recipe "Mississippi Pancakes"; the recipe appeared with the article, and it's fantastic. I'll PM you the recipe. Let us know what you try! edit to ask: It's okay to PM recipes that are copyrighted material, right? We just can't post them?
  4. I just remembered what I'd crave when I was sick and still at home: sometimes with leftover chicken legs that didn't go into the curry, she'd make her own chicken soup. She'd saute onions, garlic, and ginger till soft and fragrant, then add the chicken and water to cover. She'd let the soup simmer till the chicken was cooked through, and during the cooking, she'd add a chopped tomato or two. Seasoned well with salt and pepper, it was good equally on its own or over rice. Yum; I love this. It's great "sick" food and good comfort food as well.

    Guacamole

    I've been making guacamole for the past few months for me and my sister. I'll buy green Haas avocados and let them ripen for a day or two in a dark cupboard till they're soft. I'll add a lime's worth of juice and 1 minced clove of garlic per avocado, and for 2 avocados worth of guacamole, I'll add a handful of chopped cilantro, a few chopped grape tomatoes or one chopped medium tomato, and one chopped medium onion, red or white. All that's needed after mashing with a fork is a little salt and pepper. It's so good, we'll eat it on its own as a snack, or we'll top our salad with it. We serve it with chips only at parties. ooooh, bad grammar! tsk, tsk.

  7. I just found this thread... I'd love to know how to prepare kimchi chigae/kimuchi nabe/kimchi chige, aaaah... Last time I tried preparing it, I found it a bit, er, underseasoned. It's been a long time since I attempted it, as I'm a bit intimidated. I think it's supposed to be a home-y dish, but I'm missing something, somewhere. So I'd love to know what those who know do. Amy

    touaregsand, how do you make your kimchi chigae?? I've tried before, but wasn't fully satisfied with the result. I'd love to know how you make it!

Amy, what did you put in your chicken salad? ← Emma, all I did was chop up the leftover El Malecon chicken into small cubes, add about two heaping tablespoons of mayo, a bit of mustard, a diced red onion, and salt/pepper. You can adjust levels of mayo to your taste. Lovely.
  12. I can report that Pumpkin Lover (my twin sister) is doing well - my chicken salad and a Spanish rosé are working wonders. Try making chicken salad with leftover El Malecon, by the way - delicious! I think I'll have some of that rosé as well... Amy

  15. I was on the Bowery today to get a stockpot, but I didn't look at prices for wineglasses. You could trek to IKEA...my sister bought a set of 6 glasses for $6. edit to add: there's a bus that leaves from Port Authority to the Ikea in Elizabeth, NJ on a regular schedule on Saturdays and Sundays.     Good fish recipes

    I did this exactly, last year, for a small group of friends. One of them hated fish - she loved this. I've also made codfish dumplings and served them in broth made from lobster stock - this was also very mild, but rich too. The same friend that otherwise hates fish liked this too! She kept the leftovers for herself. edit spelling

As well as some stores in Pan's neighborhood - JAS Mart on St. Mark's between 3rd and 2nd Aves., Sunrise Mart right off of 3rd Ave. around 9th St. (hopefully Pan can give a more specific address!), and M2M on 3rd. Ave. aaaand...I want to say 10th or 11th Sts.? (not quite sure) And also a JAS Mart on Broadway between 111th and 110th Sts. Kristin, I love your blogs!

  19. A slightly mashed ripe banana nuked with some butter and brown sugar. Baby food? Don't knock it till you've tried it.
  20. The store is located on Steinway St. and 28th Avenue in Astoria, Queens. It is called Al Manara. This is the same store I had written about in a Shawarma thread posted in the NY forum. So if you are there, might as well grab a sharwama too, ← I was hoping it'd be on that section of Steinway St. I do my baklava and hookah tobacco shopping around there, so I'll pop by the store next time I'm there.

  22. I bought this exact yuzu koshou today...I wasn't sure how to use it at first, so I tasted it by itself - it's amazing, it tastes so much like Indian lime pickles! So I think I'm gonna try it with some hot rice and yogurt - not v. Japanese (pretty Indian, actually), but the yuzu koshou is delicious. edit: spelling
  23. Ohhhh...we had Kyoto-style soft ice cream in Tokyo in one of the dept. stores...sakura flavor...so amazing...
  24. I also liked the sandwiches and onigiri at convenience stores for quick snacks, as well as the nikuman! Definitely follow this one if staying at a family home: In Japan the whole family uses the same bath water -- as a guest you will probably be given the priviledge of using the bath water first. Do NOT drain the water out after you have finished your bath! I learned this the hard way...fortunately my friend's family just laughed at me a little - they weren't upset.
