    the pan is 36" diameter with a thin rice base it serves 40. with a thicker rice it can serve up to 70. We used 10lbs skinless boneless chicken thighs, 10lbs wild shrimp, 90 littleneck clams and 13-3/4 cups of bomba rice

  15. Why is the cheesecloth so important- why couldn't the steaks be left open on a rack in the refrigerator? What does the cheesecloth do?

    I made duck stock yesterday with lots of fresh ginger, onion, carrot, fish sauce and cilantro stems. Shredded duck meat cilantro leaves avocado and sriracha. mmm good.

    rotuts this is what they looked like before cooking. this butcher is in Chelsea Market in NY and has very interesting cuts of meat in addition to the premade burgers.
