  3. I went to a local steel fabricator to get a pizza steel cut and while I was waiting, I noticed a bin of scrap steel of assorted dimensions, marked down quite a bit. I had them cut my steel from a 1/4 inch (6.35 mm) piece. It weighs close to 30 lbs and you would not want kids or pets around your feet when you move it, but it works very well. I had it cut rectangular, but if I had it to do again, I'd have the corners a little rounded. HC

I had quite a bit of cut up cubanelle peppers in the fridge that I decided not to use in another dish, so, this morning I sauteed them up with some olive oil, and garlic, a few Bermuda onions, Roma tomatoes and capers and made a ratatouille of sorts. I put this on Italian toast and broiled it with a few slices of Brie. It made for a nice cold weather breakfast! HC
  6. We were going to have beef stew tonight, but took a ride to the local brewery for some growler refills and passed by our favorite fish market on the way home. The sea scallops were hard to resist and beef stew got pushed back until tomorrow. Fried local Stonington sea scallops and fries. And, @Shelby, in case you are wondering, Mccormicks Cracker meal (about 1/4 cup per lb, shake and bake style) does the sea scallops well in 375 degree peanut oil. It only takes a little more than a minute, in small batches, just keep checking for the golden brown color. HC

  9. Trader Joe's now has them, but quite often, they are picked too late when the seeds are like plywood. I have been growing them for quite a few years now. They are pretty easy to grow, and you are right, they are addicting. HC

  11. Big snow today. We were out early to get a few items. One of the things on the list was more fish fry mix. Maybe this will help you spot it. HC

  13. I just recently had my stove replaced and while they were bringing the old one out to the truck, I was working double time with a broom, dust pan and mop on the empty space. Not pretty! Those guys must have some stories to tell. HC
  14. @Shelby, I had tried all kinds of batters, including beer, but have come to really like Mccormick Fish' N Chip mix. You just mix it with water, using only as much as you need and you can mix it as thick or thin as you like. The flavor and crunch and the ease of use, just convinced me to always have some on hand. I wish I had wild catfish to go with it! HC
  15. Fresh haddock fish & chips really hit the spot tonight. The spicy garlic and lemon aioli with chopped capers and scallions helped. HC
  16. Tacos, sour cream, pico de gallo and fresh salsa. The plastic bag contains shredded lettuce, which Deb does not like on her tacos, but I do. HC

If you have a dish that you make on a regular basis, chances are that you have screwed it up a time or two and the more you screw it up, the more you learn what to look for as the dish progresses and the quicker you become at spotting an emerging problem. Failure has taught you what will happen if you don't step in and make some corrections. Usually those failures will also give you an idea of what should be done to bring the thing back onto the tracks. If you are using a recipe with which you are unfamiliar, quite often, it takes as much of a leap of faith to choose to intervene as it does to carry on with the recipe. I think that is where your body of experience, as a whole, will guide you or at least learn to better guide you next time. HC
  19. Poached eggs, fried zucchini, bruschetta on avocado toast and fresh salsa. Next time, I will not bother with the eggs. HC
  20. Aldi has had boneless chuck roasts on sale for $2.99 pp the last month and a half. Every time I am in the store, I look for good ones for the freezer. Sleet and freezing rain today made me think of IP beef stew and they are perfect for that. HC

  22. We had steak last night. The deck was a skating rink so I chose to stay inside and use the broiler. Rare, broiled steak is no prize to look at so I also chose not to take any pictures. It looked a little better as a steak sandwich for breakfast, though. HC
  23. A 2 egg omelette with sauteed cubanelles, sweet onion and tomatoes with ham and home fries. HC
  24. U-10 to U-15 gulf shrimp always go on sale this time of year and it is a good excuse to make one of Deb's favorites, baked, stuffed shrimp. HC
