  5. I've worked in kitchens that had a big ole box of instant mashed for that...OOPS! moment when someone adds too much milk to the mashed. Drys them right up...

  7. I love the idea of a place to husk in the store. Sorry Russ but I've never seen anyone piercing the kernels before..didn't like it..wouldn't want to buy it. Maybe it's just me.
  8. I saw a woman (and her kids) not only peel the husk back..she was piercing the kernels with her dirty fingernails..grossed me out. I did tell the clerk about it and he yelled at them but the corn remained in the bin...I wouldn't buy any corn that has been peeled back. I will now feel the corn up. Thanks for the tip.

  11. Not too horrible but flouring 200 pieces of liver and the kitchen was out of gloves..it took forever to get the smell of liver off my hands. Yuck. Looks I got on the bus ...priceless.

  14. Thanks for the pot likker answers..one more question..a pullman plank..from pullman loaf of bread maybe? Oh and great blog therese. Pot likker is the liquid left when you cook greens, generally with some sort of smoked or cured pork. If you've got enough of it you can serve it like a soup (as pictured in the Mary Mac photos). ←

  18. Manischevitz and other brands make Matzah year round, but only the ones stamped "Kosher for Passover" should be used during Passover. The ones that are baked year round could have come in contact with some sort of leavening. The machines and the room where the matzah is made are thoroughly cleaned before they are used to make their matzah for Passover and it is inspected by Kosher authorities prior to baking. BTW- This rule applies to any factory that makes products for Passover. ← Thanks for the info..so much to learn. Great blog Pam!

  21. For some reason I keep forgetting to tape this show. Probably because I don't use my VCR for anything but a clock anymore ... and tuning in Treehouse. BC chefs square off Feb 3, so there has been no winner, yet. www.thenextgreatchef.com is a great place to read Don Genova's commentary, as well as see the dishes made in 360 Quicktime movies. In reading the recaps, there seems to be an awful lot of amateur mistakes going on. I know these are young people starting out, but to get to the level of competition they are at they seem to be missing some of the basics, like not cutting yourself on national TV. Also, why does Knorr seem to sponsor so many of these youth-oriented competitions. Do any of these budding chefs even use their products? I kinda hope not. -- Matt. ← Thanks for the link.
