  1. As far as I know, Ramen noodles (and they are lovely), are those little blocks of noodles which have finally been deep fried, to be made ready for you to add your boiled water to . Therefore can you have fresh Ramen Noodles ?
  2. Listen to your heart. 'Best before' 'Consume by' As an ex-Scout, an Ex soldier and generally a fellow who lives on the land. cycling along and if there is a dead rabbit, (is it still warm, is it floppy), good to go. In my area now I pick up pheasants, the males look lovely but the females taste just as good , Road kill.
  3. MetsFan5 Rice, you have it right, it is a good growing medium for anything nasty. Generally I go by the 'Sniff It' test for most things. If you are going to reheat something, get it hot and do it well. But if your cheese has a bit of mold on it, scrape it off and you will be fine (unless it is from unpasteurized milk and you are pregnant)
  4. Rachel Khoo showcased a 'none casserole' by making a sauce that would be just right for beuf bourguignon, then skewered good big chunks of beef along with small onions and lardons. then she basted the skewers with the sauce and cooked on a grill, keep basting. this link (if you can see it), offers her Beuf Bourguignon in a normal way, and a good deal removed from a Casserole.that may please you: http://www.bbc.co.uk/food/recipes/boeuf_bourguignon_with_17690

  6. As an E-book I don't mind haveing 'Camping and surviving on the Prairie or 'Depression Cooking', but when it comes to a book by let us say our beloved Jaques Pepin (I have one on order now), it is nice to hold it and open for instruction in the kitchen. My latest Jaques Pepin and his daughter book is on its way now, at only five English pence and about £3 postage.

    Breakfast! 2015

I have discovered 'Steel cut oats', Whites, from Ireland. As long as you remember to soak them overnight (pinch of salt) they cook quickly. I dress the dish with evaporated milk, no sugar:
  8. In that way, and talking of brussel sprout stalks, in England we do seek out brussel sprout stalk tops. They are delicious and simple to cook.most often found in your local , locally sourcing Green Grocer:

    Ketogenic Diet

I have pretty much given up carbs, substituting Polenta/Kashka and just loads of veg. This dish is sauteed lambs liver, Kaska and mushrooms finished in the pan along with a dash of red wine. I went to my local Waitrose (uk) and asked for calves liver. the lady butcher said that lambs liver was just as good and a good deal more affordable, my order came to 70 Pence (enough for 2 meals). would you like to know how much that would be if you had chosen calves liver?, she pressed a button on the scale and it showed £7.70. It seems that some people will pay that price.
  10. Fired on by news reports that liver is good for you, I called in at my local Waitrose (UK), and asked for some calves liver, the serveuse commented that lambs liver was very good and a lot cheaper. I chose lambs liver, enough for two portions came to 70Pence. 'Would you like to know how much it would cost if you had chosen the calves liver?' She pressed a button on the scale and told me it would have been £7.70. The liver lightly cooked with kashka and mushrooms which i deglazed the pan with a dash of red wine.
  11. Rotuts, just for interest I have watched your link and i am in England... what a pleasure he is.
  12. Well, this is not so much Junk Heap Shopping, but how i rationalised my kitchen crockery. after bringing up four sons, then running the house for students (to run the four sons in education ), i thought about the crockery . Cycle camping in France every year, Duralex is a trade name that crops up a lot, so i went for it and it has done me proud. hard wearing, pleasant to look for not a lot of money:

    Fasta Pasta

Sistema pasta/rice cooker. I have had one of these for ages, two in fact, as that way it was post free. very well made and in the 'Lucky Chinese Red' it works a treat and every morning my steel cut oats are a creamy perfection. sistema pasta cooker
  14. Well, fired on by a post 'How long have you been with egullet (since 2004) I changed my photo and thought to post this meal. I am now virtually carb free, this is with lentils, buckwheat and a bratwurst. I see tomatoes and a spring onion salad there also. The carb free (virtually) has had amazing results on my shape by the way. So good i posted the image twice.
  15. GlorifiedRice Shaoxing wine is not for tasting, it is for cooking. (Am i right, or am I right?)
  16. Thank you DiggingDogFarm The America Club Sandwich. Put the chilled iceberg lettuce in at the last moment, and serve. What a contrast.

    Scottish nibbles!

I believe a deep fried Mars Bar is very popular 'over the border', (google if you don't believe me). Also, as i am on a roll... a plate of frites is known as a 'Glasgow Salad' this side of the border. This is just said to amuse you and not to insult.
  19. Not exactly a whole gift, but my second son let me try a small glass of: Dragon Ball Jasmine Tea,, From the Ying Kee Tea House Hong Kong. It was delicious and more fragrant than a fragrant thing. how on earth those tiny balls unfurled to such a grand size amazes me.
  20. Here in Cheltenham, England i buy a Kilo pot, Milbona (Lidl own brand) full cream and Greek style. It has a good shelf life and costs only £1.20. It is delicious. I read recently that full fat natural Yogurt is not as fattening as semi-skimmed.
  21. In June every year I cycle camp in France, now ,just in Brittany. for a month Twice a week i call in at an oyster farm and buy a dozen oyster for my lunch. 4 euros fifty I open them as the ' fermier de la huitres' showed me, and this is the way: holding the oyster in my palm, with the curve across my fingers , you insert the oyster knife. push and move the knife from side to side so as to kill the little fellow. he will relax his hold on his home (because il est mort. ) If you place your lovely oysters curved side down on your grill for a while , he will open, because il est morte. I must ask you , Why would you cook an oyster? put mussels on the Grill by all means !

    Chicken Stock

I buy a free-range chicken a week, cut off the breasts and freeze then roast the rest and at that, I cut the meat off and use the whole carcase for stock. All the usual suspects go in my lovely WMF Perfect Plus German made pressure cooker. (no hissing and fizzing with this patent pot). Cooking time: Bring up to pressure, then let it run for 30 minutes and here's what you do then. Turn of the gas and let it slowly depressurise . (it will take about an hour) . I make 1Ltr of good strong stock that turns to a gel.
  24. I agree, 'Here, chew on this carrot !' should please them.
