Carnitas: Finished with a little brown sugar and a little cane.. It took some of the spice out and really helped it caramelize...Grilled scallions and a little diced lime rind

Took a bone in rib steak and marinated in garlic, lime juice and kosher salt.. Grilled and served with grilled green onions rubbed with oil and salt, queso blanco, a chipotle sauce and some cilantro.. Steak: Plate: Bite: I also have carnitas going.. I have them cooking in Tequila, Chipotles, a little Adobo, Garlic, Apricot Juice, Cinammon, Cumin, Chili Powder, and some smoked Paprika.. They will be ready in like an hour or two.. That will be lunch reprise..

I have done the Three Guys from Cuba Mojo Sauce.. One thing they stress is that they use a Sour Orange.. I have not been able to find one in my hood.. They suggest using a lemon and lime combo to replace the sour orange.. But I wonder what that sour orange does.. If the store brought brand uses sour orange maybe you should try it.. Other wise making it is very easy.. I am making carnitas and a grilled rib steak for lunch and going to do a similiar marinade for the steaks.. Here is a link to there recipe... three guys

Mmmm rabbit.. For me, I would grow a garden in my backyard just to attract the rabbits.. Is there anything you can grow that will attract lobsters and veal..

Is this some kind a Eyetalian thing? Seriously though, Daniel, you haven't mentioned how you like your new smoker. Now that you've used it, would you recommend it? Was it easy to maintain temperatures? Anything you don't like about it? Please tell. ← I think the old kingsford isnt the greatest.. I prefer like Cowboy Charcoal or definately a lump wood variety.. I was impressed that a place like Loews had some good brands... I only used the new smoker once.. Its pretty good.. I was working without a thermometer for the smoker, so I had to watch it pretty closely.. My hand was a good indicator..It also had a side firebox which meant one side is definately hotter then the other.. I just had to shift the meat around more. But there might be a problem if you wanted to fill the entire thing with meat.. The box is just too hot and the long barrel design has the heat move from left to right. Everything should be put completely on the other side away from the box especially the ribs.. But it seemed to remain at a fairly even temp... It has a nice cooking surface and also has a grate where you can grill some burgers on the firebox side while waiting for your meat to smoke.. I also like how the whole thing can be turned into one large charcoal grill if you want to.. Overall for 130 bucks, its a good value.. This is just another stepping stone in what I hope will be a long string of smokers.. My ultimate goal is to have a Backwoods Smoker and a Green Egg, oh and a backyard! Its a party!

True.. But again, one can not grow lettuce, peppers, tomatoes, or berries in a window box without much effort or space.. I have all my windows filled with flowers and herbs and still love my two areogardens.. I have my one garden on top of a bookshelf and the other ontop of my cable box.. As long as you have a plug, there is space for these guys...

Went here for dinner tonight and had an "OK" meal.. Everything was pretty average..I think a lot had to do with the broken oven they have.. As I walked by, I noticed this beautiful wood burning oven, I was surprised to see it not working.. I asked about it and learned it has been broken for the last three weeks.. I asked what they usually cooked in it and they said flat breads, chicken, duck and steaks.. Bad pic of a beautiful non working oven.. The bread people were talking about was good.. But I couldnt get over what they served with it.. It tasted like a can of french onion dip.. I later found out it was creme fraiche onion dip... It would have been better if they used a Liptons Packet... The bread was of such quality, they almost ruined it.. I started with a shrimp app, while the girl had a spinach salad.. The shrimp had a nice little crust.. They were fried and were ok.. It was upsetting to get three little shrimp.. I thought the quality was nothing special, they were way too small.. The dish had an Indian feel, but was very average... They were the size that you would get with a Supermarket shrimp cocktail platter... The girls Spinach Salad was ok. The spinach was of great quality.. But it was drowned in the dressing.. Too many nuts, too much of a yogurty tasting blue cheese.. It was average.. I said in my Del Posto review I never had a duck breast I didnt like.. This was pushing it.. I ordered it medium rare/rare.. It came out almost well done.. I hated the roasted cranberry topping and thought the beans just sucked.. They cooked the beans in this sub-par BBQ Sauce.. It tasted of Ketchup and Brown Sugar.. But in a bad way.. The duck breast was prepared so poorly.. I later found out it was grilled.. Before there wood burning oven went out, they would cook it in it.. I have never seen a duck breast that looked this bad.. Looks like a dry piece of pork.. Rabbit cooked on the rotisserie.. The rabbit was split in half and cooked while rotating around a fire.. It was a bit too scrawny.. The skin had a real peppery coating, but the animal was way too skinny.. The grits were ok, the fava's were ok.. The sides were way too strong, trying to make up for the rabbit.. It was ok.. Dessert.. We ordered two things.. One was awesome.. Coconut Ice cream with chocolate covered almonds, chocolate coconut cookies and a caramel sauce.. It was sooo goood.. Three kinds of ice cream Chocolate, Strawberry, and vanilla with chocolate nuts.... Seved with a biscotti... Nothing was amazing.. Nothing was bad.. The bottom line is, that oven needs to be fixed. The service was slow, the place was loud.. The guy who sells you the wine was really positive..

I wrap skin on shoulders in cheese cloth soaked in olive oil.. It leaves the shoulders a gold brown.. Instead of black.. Another layer of oil has never hurt nobody The cheese cloth allows the smoke to go through...

I have a question.. Anyone ever get into wrapping your butt in cheese cloth? I have done it a few times and liked the results.

Thanks Raji.. Your post got me wanting to go there.. I am going to stay away from the steak cause I got a rib eye in the works... But after a week of horrific dining, I am looking for some food made with love.. I think this place will do it for me..

Thats funny you would say that about the bagels.. I would joke to my friends when coming back from school at Maryland.. I would tell them that I was bringing back pizza and bagels for everyone.. Judging from Bryan's photo I think those Cali Guys forgot to put a hole in there bagel

I have the two bags still in my office.. I have yet to try them.. So what are you thinking of doing with yours? I completely forgot about mine but, dont have much faith in them... I will start thinking of a use... Keep me posted NYT.

I understand that it might be an expensive thing.. I look at it as serving two purposes.. The first is, it provides fresh vegetables.. I know that there werent any chemicals or things sprayed on my lettuce. People who grow lettuce often complain about the large amount of dirt and bugs.. The lettuce is grit and bug free.. The second thing is, its equally attractive as it is functional.. Its really decorative and cool to have plants growing in your apartment.. Living in a city I, cherrish any sort of nature.. But things like the herbs, I already have growing in window boxes.. So, I am not going to grow there herbs.. But things like there berries and peppers.. Well, I am excited to use it.. I could see this being popular in urban areas like a Tokyo where people dont have the room for gardens.. A down side would be the time it takes and the amount produced.. I just trimmed the lettuce and had enough for four salads.. Now I have to wait a week... Looking forward to the tomatoes.. Today I made a little sandwich for lunch.. Turkey, chopped liver, swiss, lettuce mixed with a champagne vinegar dressing on rye toast..

Well its almost a month later and we are ready to eat the lettuce.. We will cut the tops today and we have another three months of harvesting... We have also purchased another one since my last post and have started to grow tomatoes.. The tomatoes are a little more involved.. I think they take three months to fully mature.. Here is the lettuce after it just sprouted about two weeks ago.. Here it is this morning: This is the tomatoes after two weeks..

Bryan, I might have found some time on my business trip to read your blog. I have really been enjoying it.. I just saw something on Anguilla last night.. And the crayfish really stood out.. Yours looks equally as pretty... I have also heard Anguilla is known for its BBQ.. Did you happen to go to any shacks selling any Cue?

I currently have two aerogardens.. I have one growing lettuce and one growing tomatoes.. The lettuce has been going for about three weeks and when I return will be ready to eat.. Its really an amazing thing.. It requires very little effort or skill, which is perfect for me Right now the choices are few.. You can grow flowers, tomatoes, international herbs, peppers, and lettuces.. But they are planning on coming out withy other seed packets.. Different berrys and things.. I am very happy with the product..
