Dejah, that's generally my experience with stir-fries. I'm pretty sure that if I did it more often it would go more quickly, but the chopping and prepping is necessarily a major part. What's the dark green in the picture above? Green onions, or did you get that from the bok choy?

That's long pieces of green onion. The paler green is bok choy.

Our son who moved to Nfld in July, surprised the heck out of us, and flew home to be with the rest of the family to celebrate Dad's 80th bday early, late Xmas, and NY, on Jan 1st.
I had nothing prepared, so the microwave thawed chicken thighs, and we had Shake'n'Bake BB! Chicken, Basmati rice redux, carrots, and a quick pickle. He dived into the butter tarts and shortbread for dessert.

  2. Prep takes longer than the actual one-wok cooking!
Yaki Udon noodles with beef, shrimp, shitaki mushrooms, bok choy, carrots.

    for a traditional holiday dinner.

I love how the stuffing is actual bite-size pieces of bread instead of small bits. Great for sopping up the gravy! Delicious!

@Dejah I've never encountered melon meringue pie (unless a typo quirk for lemon) Was it melon and if so how used?

@CookBot, @Shelby @heidih: Yes. sorry...brain fart that affected my fingers: too much sugar, carbs, EVERYTHING!
Sorry to disappointed, but it WAS indeed LEMON Meringue pie 😏

Post Christmas fatigue, so supper was curry stir-fry:skinny end trimmed from a tenderloin prepped for Jan 1, bell peppers, onion, and curry powder, with Basmati rice.

  5. @Shelby's prime rib has me salivating. We will have ours on Jan 1st, and hopefully, I'll get some semblance to hers!

And @Ann_Tperfect rack of lamb. hey never seem to go on sale, but I have been picking up chops on "markdown" at Safeway regularly. Have quite a stash and will need a feed soon!
Our family Christmas gatherings have changed so much over the last couple of years, Hard to get everyone together, especially now that one of our sons and family moved to St. John's, Nfld.

Our Christmas day sinner was at our eldest son's home. The in-laws were also present. The kids cooked a turkey, and I cooked up a ham, as my grandson is allergic to turkey and chicken. The sides were plentiful (made my Michael Symon's Holiday Brussel Sprouts),  and we had banana cream pie and melon meringue pie for dessert.

I made my annual Cranberry Apple Orange Pecan Chutney - great with ham, pork, chicken, toast;-)

I kept the "bone" from the ham at home, and there was still lots of meat left for our supper tonight with scalloped taters I made . Hubby wanted apple sauce for his ham. I preferred the tang from the chutney.

  6. Hope everyone is having a lovely Christmas eve / day with family and friends.

Just the two of us tonight. I had picked up a .5 kg marinated AAA rib eye steak at Safeway. It was $10.00 off a $25.00 piece of meat.

Tossed onto a cold cast iron, then finished in the oven.
I had an Express order from Superstore. I had ordered a 10 lb bag of taters, and got a 20lb bag! Took most to the son's and I kept a few and make scalloped taters. Carrots and sauteed pea shoots added colour and veg requirement;-)

Dessert was small slice of mincemeat pie from the 6" pie I made yesterday, with vanilla ice-cream!

  7. Beef kidneys have been in short supply all over this small city! Finally, a small meat store, Tender Cuts, got a shipment in on Wed. I grabbed 3 and used 2 to make a Steak and Kidney pie for us, and 2 for a friend for Christmas. Ray's the only one in his family who enjoys this, so he can eat one and put the other in the freezer.

Dec 21 is Winter Solstice, and冬至 (dōngzhì) in China. My Mom always made tang yuen, the savoury version. That was one of her favourite dishes. I felt her hands guiding mine as I made the glutinous rice dumplings, cut up the daikon, etc. I had these lovely dried whole shrimp, a gift from my sister in Vancouver, some lap cheung, and "fresh" shrimp. Love to dip the dumplings in a  mixture of soy sauce, chili oil, and black pepper. Those dumplings really stick to your ribs!

When I picked up the beef kidneys, I spied a boneless lamb shoulder. That lamb followed me home and into my oven for a low and slow roast. It was marinated with whole grain dijon mustard and fresh rosemary.

  8. Temperatures plummeted: -33C and feels like -46C the last couple of days!
Put the oven to good use with baking and suppers:

Leftover Citrus Roast Chicken from a couple of days back, turned into Chicken Pot Pie

Using up some of the assorted lamb chops from Chinese grocery store. Wasn't great for use as chops, so tossed them into a Thai Red Curry stew in the Instant Pot

Around here, for the most part, duck will be found in one of the freezers. Not the smoked duck, of course, but the unsmoked. It is very rare to find fresh duck in a supermarket unless you go to one of the Asian ones.

I was able to pick up 3 duck breasts in cryovac a couple of months ago. I have never seen them at Superstore until I checked their Flashfood Ap (all kinds of items reduced by 50%) They are still in the freezer, and I was just thinking about them a couple of days ago.

  11. We'll be doing 2 Xmas meals. The first will be on the 25th with our oldest son and his family, and the in-laws: 7 adults and 2 kids. Son will do the turkey, and I will do a ham as grandson doesn't eat fowl. My side contribution will be Michael Symons Holiday Brussel Sprouts and scalloped taters. Dessert will be my Dad's from scratch Banana Cream Pie.
On Jan 1, our daughter and s-i-l will be able to join all of us. They both work in the medical field and kidless, so they work over Xmas but get NY off.

We will have a late Xmas with the whole family, NY , and early 80th birthday dinner for my husband.
I have a whole tenderloin trimmed up, so may roast that, or if I can get a Sterling Silver Rib roast on sale, that may be the ticket!

Of course, there will be Yorkies and English trifle for dessert.

Meanwhile, I have been making shortbread, Reindeer Crack, New Zealand Birdseed Bar.

Mincemeat was as difficult to find as Bugles, which General Mills has stopped producing in Canada. A friend coming up from Texas brought me 12 bags!

I looked all over town for mincemeat, and finally found jars of Roberson Mincemeat at Giant Tiger. I may have bought the last 3 jars!

Only my hubby and I eat mincemeat, but I will be gifting to friends who can not bake any more due to poor health.

  12. Doing some tests that need avoidance to red meat for a few days:

MaPo Tofu with ground pork for hubby, and I had spicy eggplant and tofu for me. I used to combine the two, but was told that MaPo Tofu does not have eggplant 😆 Had some mint that needed using up and I loved it with the Toban sauce.

  13. Been spending so much time and energy catching up on all the great food here by all members. Then I was too tired to post my meals! LOL!

    Refreshed tonight, so here goes:
Picked up SS Sirloin Steak Bundles. Had never had this cut before, but it was 2 very thick steaks cut and tied like mini roasts. It was buy 2 packs and get one free. Pan-seared then finished in the oven.  Made mushroom gravy in the pan, baked sweet tater and field green salad.

Panko coated Halibut with leftover rice pilau from another meal:

Been getting good sales on pork ribs, especially ones that are bite size so I don't have to haul out my cleaver! Did up one pack with black bean garlic sauce in the Instant Pot. Half went to grandson.

                                                                                              1669928829_BlkBeanribs9491.jpg.ba3318b6e7ae84a2a6f49464022fdd53.jpg

Our Real Canadian Superstore has an app for reduced food items. It's been a drought in the meat catagory, but this week, it's been a windfall! Picked up packages of marinated beef short ribs. Browned and braised for 3.5 hours in the oven and eaten with broad egg noodles. They were really good so I grabbed 2 more packages (2 ribs in each) on another day for the freezer.

Had wontons for lunch a couple of days ago. Lots of the filling left. Stuffed deep fried tofu, pan fried then simmered in oyster sauce.

Another great find on Ss Flashfood this morning: Boneless, skinless turkey breasts: regular +$15.00 on for 50% off! Best Before Date Dec. 11. I grabbed 4, put 3 into sealed bags and roasted one tonight, rolled with stuffing inside. Boiled mini taters, green beans and carrot. It made for a lovely meal for 2, with enough meal tomorrow.

  15. Been enjoying all the great meals shared by you all!
Been doing the cooking here, but just not finding enough time to post after babysitting for a week, medical trips to the city, and perusing all the pages here!

My 2 granddaughters here are pretty picky eater. So I try to cook something they'd like that would also suit us:

Baked Ham and Scalloped taters. They don't eat a great deal of meat but loved the taters:

    431567826_BakedHamScallopedtaters9226.jpg.9ce12097fc1fc379424a66d6bb72821c.jpg

Meatballs and Pappardelle with Tomato Basil sauce. First time for the girls with the Pappardelle. The had fun with the long wide pasta and even ate a couple of meatballs each. We had to sing "On top of spaghetti" with the meal. LOL!

    2078401946_Meatballsnoodles9213.jpg.1a12fb4750033c26e3d99589a5d08ef7.jpg

Battered pickerel and chips. They loved the batter and the chips. Thought they'd like the Mozz sticks - not interested.

Other meals with the girls were from Wendy's and sushi .

Then it was a medical trip to Wpg. This always brings home BBQ Duck, rice rolls. The quick meal after we got home from the 3 hour drive: Duck, Gai Lan, and rice rolls

The owner of the BBQ shop always gives me big packages of bones, the trotters, from his Crispy pork ( siu yook). The bones make for delicious soup, congee, etc

Chicken Paprikash with Pappardelle - with a bit of Hungarian HOT praprika for a bit of bite.

Had 3 bell peppers in the fridge, and I had made up a big batch of wonton filling. Combined the two and we had Stuffed peppers and Black Bean Garlic sauce.

Tonight, epic Corned Beef Failure:-( I lay the blame totally on the source of the meat. Superstore packaged, and it was full of gristle. I did per Ann_T's method of roasting. The flavour was pretty good, but it was really chew and spit. I'm not sure if even sous vide for 48 would have helped. I need to find a butcher! The vegetables and shipped taters were tender;-)

  16. Picked up a piece of corned beef yesterday.
I remember @Ann_T had posted about roasting it?
Any suggestions on how to cook the beast without it being dry and crumbly? Sous vide? Pressure cooker? Oven? Boiling and simmering?

    TIA!

I buy baby pickerel / sauger. Google tells me they are a smaller than Walleye:

Walleye are often called pickerel, especially in English speaking parts of Canada, while in the United States of America, they call the same species (Sander vitreus) a walleye.
And around and around we go. Whatever name, they are all good eating.

We made wontons for lunch, with ramen noodles. I also tossed in some glutinous rice flour dumplings and julienne daikon. Dumplings were not a favourite for my hubby and grandson. They find the "globs of sticky chewy balls" hard to chew and swallow. LOL! I love them!

  20. Had longer pieces of pork ribs left over from making Black Bean Garlic ribs earlier in the week.
Had plans to make Pork Rib Stew with Tofu sticks (Foo Jook) but got busy with other stuff.

So, marinated them with Meen See (Brown Bean Sauce) and cornstarch, thrown into a metal pan with a bit of chicken broth, covered with foil, and baked at 350F for 1.5 hours. Juicy tender finger licking ribs. Steamed some broccoli and stir-fried with a few shrimp.

I wish I could taste this.   Makes my mouth water.

Crushed peppercorns with the mortar & pestle.

Thanks, Ann_T. The stuffed aubergine turned out nicely.
Your beautiful steak gave me idea for our supper last night.

A couple of beef tenderloins grilled on top of stove cast iron pan.  Baked taters and veg. We love the McCormick's Green peppercorn gravy, made with only water and not milk and water.

Tossed in a few shrimp at the end.
