  1. oh boy! my favourite topic. Yeah, I really wish I could try out knives seriously before I buy. The only serious damage that occurs when I enter the Knife department is to my bank account. I have a Global Utility Knife that i Hardly ever use. I use my Kyocera paring knife moderately often but it feels too....fragile and just doesn't have that intangible factor that makes you wanna use a knife every time. I have a 6" Henckels Professional S Santoku which i seem to use for just about EVERYTHING. It's not so unwieldly so I can almost use it for paring half the time. It's still big enough to do the big knife jobs. Only major flaw with it is that it doesn't have Granton edges. Btw, avoid Ceramic knives, after using one, i find that they're mostly hype. They're sharp, yes no doubt, but they're just to fricking delicate to do any real work with. I'm looking at a Chef Knife next in the 8 or 10 inch sizes. Currently debating between a Global and Wüsthof. Anyone know if the Global drop forged is worth the extra cost? It's really really heavy.

  3. at my house.... i live alone. When i have guests over, we eat at my 4 seater dining table. When i'm alone, i eat either in front of my computer (addict!) or right next to my sink/gas hob (lazy!!!!) TV? I don't even own a TV I've banned TV in my house.

  5. speaking of ranges, the flames on my gas burning hobs are kinda yellow tipped. Is there anyway to get them all blue and hot like in the pictures?

  9. ewwww...stamped blades are verboten here. ok seriously a few stamped blades are good because they're cheap and allow you more money to spend on your serious blades. But they're not pretty and definitely not lustworthy. IMHO, knives that can be stamped: fillet knife ( you dont really benefit from forged heft and all that jazz and the thinness of the blade is a must) bread knife (ditto) cake knife(that long broad thing you use to spread icing)

  11. i bought a ceramic blade out of curiousity. A good old Kyocera ergonomic. it was VERY VERY Sharp but feels odd to handle. Feels like it has to be pampered and mollycoddled and it doesn't stick to my magnetic bar. It wasn't cheap either. It does its job but it does not inspire confidence. I'm just gonna use it for now. My S.O. is soooo gonna bug the shit out of me (to put it mildly) if I blow more money away on knives. my next blade planned is a 24cm Drop Forged Global Chef's Knife. Sure i'd love a custom blade but i can't afford it for now.

  13. home.. home on the range i have a 90cm 5-burner AEG. i'm quite happy with it but boy would i ever wanna trade it up for a 48" Viking. Why the hell for? I dont know

    i had really crappy gifts for Christmas and I think the holiday should be cancelled on account of the fact that the gifts get crappier every year. I ate overcooked leg of Lamb bangers in maple syrup with caramelized onions and fuji apples several unindentifiable chicen dishes a dinner roll that I could probably sharpen my knives on oh... that was Christmas Eve. On Christmas day i had Spaghetti Eww Cheese Fondue Yummy Apple baked ham Turkey roasted pork loins Christmas Sucks i tell ya.

  19. one bit of niggling. title should be American Chocaltiers who do delivery *LOL* saying "who deliver" could mean "who are as good as they say they are"
  20. amen to that! there's nothing quite like thick sliced bacon on thick cut slice of bread with a few slices of brie or emmental oh and a slice of tomato maybe add a poached egg on top garnish generously with handshred basil.

  23. i find that if you chop in a well ventillated kitchen, and if you have a sharp enough knife and zip through it fast enough, you wont cry from chopping onions.
