Hmm. The Food Lover's Companion states: "french, to: 1. To cut a vegetable or meat lengthwise into very thin strips. Beans and potatoes are two vegetables that are commonly "frenched". 2. To cut the meat away from the end of a rib or chop, so that part of the bone is exposed."

I've found Mario's recipes - on the website and in his book, which are usually identical - to be spot on: his numbers are tight. We regularly make his pasta, gnocchi, osso buco, and whole red snapper dishes. There's very few cook books that I have that have recipes as accurate as Mario's.

Bugs me when I've ordered a cocktail to start with and the waiter wants to take away the wine list. I have to grip it tightly, and tell them I'm going to be ordering wine. Is it an assumption that women don't order wine?
