  1. Well, yesterday I fired up the ol' WSM for the first time in a while. A nice 8 pound butt was on for almost 13 hours and came out great. No pictures this time as I could not find the *#@$ camera. It has since been located but the deed was done. Sorry I did not have it as I had a chimney starter of charcoal going well before dawn. Got my neighbors attention as he looked out to see were the flames were coming from. I think he went back to bed most likely saying "that clown is smoking meat again." This morning when I was packing my lunch for work I opened the container holding the leftovers and was greeted with the wonderful smoky smell. I do hope the intrepid memebers of the EG smoking group light a fire and start smoking. It remains one of my all time favorite things to do and my all time favorite things to eat
  2. And I'm eating the last one of those shoulders tonight in a nice Irish Stew. ← I made lamb stew on Sunday at the request of my wife. I went looking for shoulder to stew but the best I could come up with was a semi-boneless leg. All these legs of lamb must come from lamb with no other parts. Leg, either boneless or semi-boneless is all I ever see, excepting those little, and very pricey, chops
  3. Harvey Wallbangers for everyone!! Yay! ← Katie, My darling wife has taken to mixing different martini versions now that I have her convinced gin is a good thing. She found one that calls for the galliano inplace of the vermouth. So she wants it and I need to get some. It sounds like something worth trying and I KNOW I remember it in the short bottle. May have to take a trip across the border to see if I could find one. Some searching of the various sites did not seem promising however. Perhaps they don't even make the short bottle anymore. Oh Well. I have some other things that most likely will last longer than me. That bottle of parfait amour is not going down quickly. The pisco and the Torini Amer don't seem to be moving either. I'll put them in my will for you if you want them
  4. We were in the Lancaster specialty store yesterday and the place is pretty much picked clean of old Chairmans Selection items. The store has been cleaned up and looks much better than it had. Awaiting the arrival of whatever the new program will bring on. Was looking for a 375ml bottle of Galliano. Stores no longer have this and LCB headquarters tells me they can't even order it as the distributor won't send it to the state. A 750ml bottle will most likely outlast me. I worked at a bar were the Galliano bottle lasted, as near as we could figure, almost 6 years. Did pick up some other items I had SLO and they are getting a bottle of Armagnac in for me from another store. The guys at this store have always been helpful to me getting stuff in from other places.

  6. I am no real fan of Bordain as I find his shtick to be tiresome. However, i encourage him to cash in as much as he can. Sooner or later, and I hope sooner, it will be over for him and he has every right to make as much as he can any way he can. "Fans" who pine for ideological purity in their celebrity fixations need to just move on. Bourdain don't owe all you groupies nuthin.

  8. I like to live life on the edge as well as the next guy. But, please do not try this Daniel. It truly would be dangerous. You cook to much wonderful stuff to loose you or someone else to the indoor use of this device
  9. The one thing that will take off the grease is a serious steam cleaner. Not those little rinky-dink things that they sell on infomercials. They can be rented but should be used with some caution. If applied incorrectly the steam will remove not only grease and grime, but also paint, light bulbs, light sheet metal and pets and small children.
  10. What EG really needs are more Bourndain topics. There are currently 4 on the first page of this area and, gosh darn it, that is way to few. I am proposing a seperate Bourndain area and will also soon announce my plans to start raising funds for the solid bronze life size Bourndain to be erected in front of the Washington Monument.
  11. Maggie wanted coffee for her office so I bought her a Tassimo for her birthday. So far, she tells me she likes it very much. She has some coffee and some of the latte things. I had one cup of plain coffee from it and it was not a bad cup. I like mine strong and this was not. It was hot, however. So far,so good. We will see how it holds up over time
  12. I just had the chance to speak to the manager of one of our local McDonalds, Holly. He tells me the fish can be pre-fried with a hold time of 20 minutes. He also said the buns are steamed to order and the tartar sauce is now a premixed product. I forgot to ask if the still have the caulking guns for the tartar sauce.
  13. A friend of mine just returned from a business trip to China and brought a bottle home. I've had many kinds of distilled beverages in my time, some of unique quality. This stuff was very, very nasty. It is a taste I would have to work at to acquire.

LancasteMike, We will be touring F & M, and we will be staying at the Lancaster Arts one night, so your advice here and on the Lancaster link (if still applicable) is all very useful. Between Carr's and Jeffries, for our one dinner in Lancaster, which would you recommend? ← If I had to choose one, I would pick Carr's
  16. The places i mentioned in this thread are all still good Lancaster places If you are going to F&M on the college circuit Gibraltar is just across the street. The Iron Hill BrewPub has just opened across the street as well. Liked the beer, not crazy about the food, but they are brand new. A new place, Fenz, is just down the street as is John Jeffries. We are going there for Maggie's birthday on Tuesday. One place to avoid near F&M is the Rosa-Rosa Italian place. The pizza place is ok,but the restaurant is not. Two different places with the same name. Also just down the street is the Campus Deli, which has Lancaster's best sandwiches. If you have any specific questions about anyplace let me know and I will be happy to answer.
  17. They sound right tasty, Bob. But I can confirm they ain't the real deal. I forgot the Amish vendors are not at RTM on Tuesday. However, I would not be stunned to see then at vendors even after Lent begins. Obviously, the true tradition is they are a shrove Tuesday event. In Lancaster County the tradition has been bastardized to the extent that they are often for sale throughout the Lenten period.
  18. In Lancaster the whole county will be covered waist deep in the things. Some of the best are made at local church kitchens. One of the most famous is Holy Trinity in Columbia. They sell a ton of the things and the are so popular it is by reservation only. Sort of like reserving pizza dough at Taconellis. The real deal are just plain fried dough. Those with sugar either powdered or granulated are not the real deal. Some places even glaze them, like donuts, but that is also not authentic. It will be hard to find a place of business that won't have some that people bring to work with them on Tuesday. I would certainly imagine the Amish vendors at RTM will be hawking them.
  19. This move is to counter market incursions by McDonald's, etc, as well as the recent downturn in the U.S. economy. Has anyone been "in-the-know" and been ordering the short size all along? Will the smaller, cheaper cup of coffee (with possible refills) keep Starbucks in your coffee routine? ← It may. The only issue being is that the coffee, basicly, sucks
  20. They look great Bruce. Cold weather is no enemy of the WSM. I have done some good smoking when it is cold. Wind is the only thing that can cause trouble. But, beautiful ribs. I hope they tasted as good as they looked
  21. We had a bottle of this with onion soup I made on Sunday. It really was a big wine with lots of fruit as Katie says. However, it went well with the onion soup. The price was very nice as well.
  22. Well, we went and it was fine. Nothing special or anything but fine. To all who took offense at my post let me express my regrets. It really was offered as a light hearted one by me. Perhaps I came off too strident. I really did mean it to be sort of a joke. We did, of course, have a great time with our friends and enjoyed their hospitality greatly. I did not have the dish with the "hint" of cream. i did have some nice pasta. The salads were ordinary and the salmon special my wife got was over cooked and tasteless. The bread service was very good and the coffee fresh and hot. A good time was had by all and I really am not a grumpy snob. Now, there is this Chinese place we go to that says on the menu that one of their dishes has a 'suspicion' of garlic......
  23. We have been invited out to eat tomorrow night by friends. They are taking us to a fairly new Italian place. I looked at the menu online and saw this: "Extra wide fettuccine pasta tossed with prosciutto, mushrooms, green peas and a hint of cream" It's that hint of cream that has me worried. Not the cream itself, but that description. How many ounces in a hint? Is that supposed to be clever? It certainly is not original. I sure hope the cooking is better than the writing. I am fearful of this place already. Anyone agree?
  24. This really is sad news. When we were in town we loved Lakeside. Good food and they were always very friendly to us out of town non-Asians
  25. Have had fish and chips at Nodding Head that was very good
