If only it were that simple! No knee holes. Loss of leverage when sitting. As @liuzhounoted - much need to move. Wheeled chairs/stools offers other challenges. Sometimes if you are able to overcome these obstacles you are so exhausted that you cannot eat whatever it is you cooked.
