Hello all, I am interested in having a go at Croquants at some point (using El Bulli Texturas). Anyone had success in this area ?  I also have a great interest in SousVide and shall be experimenting with this technique in combination with BBQ cooking and smoking ;-)

I know nothing of croquants, but this is certainly the place to learn about and share your sous vide adventures! Many very skilled folks on this forum. Welcome!
