Even though summer weather has slowed my chocolate production considerably, I still leave my EZ temper on 24/7.  To me it's not about volume of silk but having it at my fingertips whenever the mood or need to temper chocolate strikes.  The unit is very quiet and only adds a few dollars per month to my electric bill.
