Ah - well I didn't bring my knives. Anna was in charge of dismemberment and she likes her own knives. My knife roll is currently loaded with my chocolate tools as I'm heading to Chicago on Sunday for a showpiece course.

at any of the 'Fests youve been to have you ever seen one of those PID temp/air-flow controllers attached to an Egg?

there dont seem to be any eggFests in the Boston area at least that I can find.

One of the guys had one with him here - but you need to take the metal flange out of the egg to use it and they are epoxied/siliconed in place. I do have one of them - but never have gotten around to using it. I don't do a lot of the low and slow cooks.
