I guess cucumber really is a fruit

Same story in Asia. Very common for cucumber to be eaten as a fruit. Or in a stir fry as a vegetable.

I think it's those European sorts who like to make rules and restriction on what is fruit and/or vegetable. Does it really matter?

This topic prompted me to look for more fruit salad recipes using cucumbers and I found the following one and prepared it for dinner last evening.

Apple, Cucumber and Tomato Salad

I used two smallish "pickling" cucumbers, prepared exactly as instructed and I have to say the flavor was exceptional.

I used only about 1/3 of the jalapeno and that was more than enough for me.

I had one Braeburn and one Golden Delicious for the apples and for the tomatoes I used one yellow and one red, both heirlooms, I don't recall the names but they had lots of flavor.

My in-laws prefer cucumber sliced on the bias, about 3/8", tossed with a little sea salt. Try it that way. It's really good.
