The bistro du Paradou is a set menu. except on Friday, that's also set, BUT, for the grand aioli. But in October, many places are closed. I love Saignon , the Presbytyre is a great place to dine, and the ambiance at The room with a view. After late September it's difficult. But early on in your trip go to La chassagette, the only recognized organic farm restaurant that serves a set menu ala tapas!

This woman, as one reviewer wrote, introduced Americans to cassolet. (to the American casserole tribe.) This great lady from my town , whom I rubbed shoulders with, will be greatly missed. P.S. Tonight on our local PBS, Pepin called her, "An Anti=snob."

For dining, I prefer Avignon over Aix. Clos de Violette is one the few great places in Aix. But it is beautiful. Sugested reading: MFK Fisher's, "two towns in Provence, " And "The Boss Dog." You'll get a feel of Aix.

I finished that book( Reichel) several weeks ago and I highly recommend it also. (Joseph Wechsberg was my favorite.)

IF you look good in jeans, fine. All my French friends wear them BUT they fit perfectly and are clean. My French friends say they can always tell American men by their pants, and the woman with their baggy clothes. The french wear clothes nipped in to the outline of the body. They all don't wear black.Depends like anywhere else if you're trendy, or a fashinita. But I still believe wear what you are most comfortable in. You'll have a better time. I've sighted some French people wearing some questionable things but you see that in any dining place around the world. Go, and have a great time. Bon appetit !

Yes, we have eaten there twice. It was referred to me by Michael Biehm the decorator/Provencal author( Recipes from Provence, " "Colors of Provence."and Cooking with herbs, the flavor of Provence.") who was a beautiful shop there in L'Isle and is a friend of the owner.

remember, do not put fleur de sel in something cooking, you sprinkle it AFTER and it brings out the flavor of the dish.

And should you go to Noirmoutier, there is A GOOD hOTEL/RESTAURANT called fleur de sel. At Ile de Ré, at those waterfront cafés they serve a great beer called La Blanche de Ré. I brought the empty flip top bottle home. Oh gifted one, I did not read your post through . Now i see you mention Fleur de sel.

Years ago, my first time in Paris, I dined at a charming little place called "Les Saimailles." I'll never forget the refreshing taste of my dessert, six egg-shaped sorbets in dazzling colrs and flavors.> The chef was Jean-Jaques Jouteaux. In 1979, in Gourmet, he is quoted, "We owe Bocuse alot. Before him, a chef was a laborer. Now he is a respected man." Juteaux'x restaurant later burned down. I hear wonderful things about his place, "La Provençal"" in Cap Ferrat. Has anyone dined there?

Two years ago we were there for a few days. The food was VERY good. But the best meal was at Marc Fayat's Auberge de Eridan, expensive but a once in a lifetime for us.

It's between Grasse and Tourette-sur-loup. I was told by a friend that reservations are a must. We'll be near there so may just take a chance without them as we will be on a tight scheduale. The Dorade recipe looked too complicated for me. Did you try that one?

This chef had the two star, "Veille Moulin" in Burgundy. Now he has located Rte de Nice, in La Rouret, Haute provence. Has anyone tasted his food? Saveur gives a glowing report.

A favorite stop for us is Trouville at the Brasserie, Les Vapeurs, for their mussels in cream sauce.

there certainly is a difference in the Calvados there, than the fire water here! The lobsters in normandy and Brittany are grilled, wonderfully done in various ways. Here in New England, you rarely see lobsters cooked that way, and the one time I did at Jasper White's Summer shack it was too dry.
