    In the amazon search bar type:  "amazon fresh".  When you select something from amazon fresh you should get a dialog box to enter your zip code to see if you can get amazon fresh deliveries.  Even if you can get amazon fresh, not all products are available in all areas.

  2. I seldom buy bacon.  But today I received bacon from amazon worthy of the world's attention:

    L Halteman Family Meats, Hickory Home-Smoked Pork... 

     

    Not too thick, not too thin.  This bacon smells wonderful, even raw, and the best thing there is no impenetrable vacuum packaging.  It comes in butcher's paper.  There are three options:  hickory, apple, and hickory with skin.  It actually looks like the product picture.

     

    I cooked up three strips by the usual Joy of Cooking oven method -- CSO, steam bake, 350 deg F, 10 minutes.  Eggs and English muffins.  I am replete.

     

     

    Edit:  five options, I forgot to mention maple glazed and peppered.

    My refrigerator has a tin of Glyngore sardines.  I've not seen this brand in years -- though in truth I've not gone searching the local Shoprite.  In review The Washington Post described the Glyngore flavor as "revolting".*

     

    Not sure how long I've had these.  From the price sticker they came from a market where I probably haven't shopped since I moved here in 1980.  The aforementioned Washington Post review, also in 1980, listed the Glyngore price at $1.69.  Food is cheaper the longer you keep it.  Whenever I bought my can I see I paid 89 cents.

  4. Continuing my odyssey through Bugiall's vision of Sardinian cuisine:  Minestra di Ceci* e Finocchi (p96).  I seldom prepare soups, which is just as well as half a recipe made an awful lot.

     

    Good though.  And I got to show off my Falk copper pot au feu.

    Well, my bread bakes at high temperatures of ~400 or more.  With the oven set to 475 results compare to 460 on the old stove.  What I finally ordered was a ThermaQ.  Had I noticed the Therma K, I might have gotten that instead.

     

    I restrained myself at the last moment and postponed ordering all sorts of probes.

    But perhaps the oven's temp cycles will confound a thermometer. One can get around this by putting a ramekin of oil in the oven and taking its temp. It ought to be around the prescribed temp

     

    This oven fast cycles the heating element, not like my old oven.

    I have gotten good service out of my mechanical oven thermometer for at least 15 years. It has a little hook at the top for hanging or a little metal foot on the bottom where it will stand on a rack. They seem to run between $5 and $10 now. Just saying it would be cheaper and probably last longer than a digital.

    Indeed I have one!  I have also done the Harvard sugar test in my old oven, which seemed to be right on.

     

  8. I ran into my apartment superintendent at the spirit monger's shop this evening.  (Small town, I know.)  He asked how the new stove was doing?  "Very well," I replied, and restrained the urge to lick his toes.

     

    Nice as the new stove is, from my bread experiments, the oven temperature seems a bit lower than the old one.  At least when the old one was working.  The instructions for the new stove suggest you not mess with the factory calibration as the oven is more accurate than oven thermometers.  Nonetheless there is a calibration procedure for the stove and I'm strongly tempted to invest in a digital oven thermometer.

I should say I didn't do crispy this time. I need to experiment some more to get the best results with it but the chicken was moist, tasty and tender.

    For crispy chicken in the CSO:  steam bake at 450 F.  No oil, no nothing, except maybe dry spices (if one must) and a little salt...OK a lot of salt.

     

    For thighs my current preference is 300 F, sacrificing some crispness for the most succulent flesh.

    Downside, it has to be plugged into the wall and there is a thirty minute warmup.  I also have a few Thermapens, including the pro-surface Thermapen.  Orange is best.

     

    Since I recently acquired a new stove I would like to get an accurate digital thermometer that would monitor oven air temperature for baking.  For my baguettes I've found I have to set the new oven slightly higher than the old.  My Agilent is only good up until around 350 F.

     

    Is there a consensus that the Dot with an air probe is best for the purpose or is there something else I should consider?  (Such as two Dots.)  I note the Dots are currently on sale.

     

    This question has time value, what with the glacially imminent Modernist Bread.

    On the plus side you can buy wine and beer through private retailers and all grocery stores carry it. (Just researched and we still have some dry counties, although municipalities have the power to allow or disallow alcohol within counties, and that overrides the county's designation, but only within city limits.) So you see, alcohol is complicated in this state. When I first moved here, even finding liquor was a totally word of mouth thing. ABC store? What's that, kids' educational toys? xD The state legislature even recently passed a law where municipalities or counties can allow restaurants to serve alcohol on Sundays for brunch before noon. Raleigh allows it starting at 10:00 AM. Not sure about Cary or Wake County, but if they haven't done it yet, I expect they will soon. So we are slowly catching up with the 20th century. :D

     

    It looks like amazon will ship over 3000 wines to NC vs only 986 to NJ.

  12. Fagiolini  all'Aglio -- *not* Bugialli's recipe.  Bugialli and all true Sardinians may spit on my grave.  But I assert my 0.3% Sardinian genetics.  This was my thirty second green beans with the sauce from Bugialli's Sardinian Pollo al Guazzetto.  Most excellent.

     

    Baguette of course and no lack of Soave.

    I grew up in Pennsylvania which has a state monopoly and very bad wine advice.  New Jersey has strange laws, but not as bad as some.

I tried every way I could to get cigarettes delivered and because of federal law, the only way to accomplish that is have limited amounts imported. Many places that pretend to do that though, are scams. I researched before placing an order, and I'll bet the posters of all the complaints against these scam sites wish they had too. There seemed to be a few that were legit, but it still seemed to risky.

     

    Back then a four mile hike seemed like a hundred miles. Now I'm doing it regularly and am almost certainly healthier and stronger for it. Still though, if I could get alcohol and smokes delivered, I would go for grocery delivery during bad weather at least.

  15. Delivery of alcohol in the US is regulated by the state.  This power is granted by the 21st amendment:

     

    "The transportation or importation into any State, Territory, or possession of the United States for delivery or use therein of intoxicating liquors, in violation of the laws thereof, is hereby prohibited."

     

    For reasons, this clause is often on my mind.  However I have less sympathy for tobacco fiends as I seldom leave shards of my broken rum bottles on the sidewalk.
