  1. Marcus Samuelsson's The Red Rooster Cookbook: The Story of Food and Hustle in Harlem $2.99
  2. It's impossible to judge the condition of the knife via a photo. But based on what I see, I'd just sharpen the dang thing—I love rustic!!! If you want a "shiny" "cimeter" or "scimitar", save yourself a lot of personal effort or labor expense and just buy one.
  3. Control-freaks rule!!!
  4. Margarine!!! It's the work of the devil!!! If we got rid of all the margarine, the world would be a butter place!
  5. Two books by Sidney Saylor Farr: More than Moonshine: Appalachian Recipes and Recollections and Table Talk: Appalachian Meals and Memories
  6. I like everything with the exception of Canola oil. There's NOTHING worse than a pizza crust or the like with a 'fishy'' flavor!!! I tolerate at times, if I have to—when it's used in something wherein it's "compatible." Heck, it's not really food anyway—it's Diesel fuel!!!
  7. Beer vinegar via the Boerhaave Process—started Sunday, February 3rd. It's definitely already started to turn vinegary.
  8. Thanks, Heidi! I just finished listening to the interview.
  9. We have it here: http://ccld.lib.ny.us/seed-lending/
  10. That's useful. I had a worksheet that's very similar when my website was up and running. I'm in the process of relaunching the website, but it'll be a while.
  11. What pisses me off is they don't include the index in the "Look Inside" bullshit! That leads to a lot of lost sales!!! MORONS!!!
  12. @kayb Are you still considering this? I plan to get mine up and running in the not too distant future. I'll document it, if there's interest. I won't be curing anything fancy. I'm past the fun phase of curing "stuff" from all over the world. Now, it'll mostly be Appalachian stuff and other basics—simple stuff. I have too many irons in the fire and a loss of interest in "fancy."
  13. I think I'll wait until tomorrow before I transfer to the second jar. I've got an idea on how to increase surface area SUBSTANTIALLY!!!
  14. That's the very reason I got started with sous vide. I bought a Sous Vide Magic many moons ago! ETA: It's also what prompted me to become a member here, after lurking off and on for MANY years!
  15. I think pitcher plants do well hydroponically. I'm not sure about others. I grew several different types when I was a teenager. I bought from a nursery exclusively devoted to carnivorous plants.
  16. I'm the only person in my family who's grown them.
  17. Once upon a time, I grew carnivorous plants. I'm not against growing them again—hydroponically. But we don't have the room, and I'm dirt poor.
  18. I even asked Chris Young about the possibility of creating my own. I have some ideas!!! He did say that it's, at least, theoretically possible.
  19. I'm not up for arguing, but "from available steam" implies that it's not always available or used. Would someone PLEASE just create an affordable combi-oven of decent size!!!!!
  20. Is it an incorrect definition? It's called a combi for a reason. "Dry" heat and steam. I don't see where it reads that steam moistens. It does read "moisture from available steam helps to prevent meats from drying out and shrinking." I'd say that's maintaining moisture. But, hey, I'm not an expert on anything—other than eating!
  21. I'm TOTALLY lost when it comes to hydroponics!
  22. That's a pic taken quite late in the season with some very tall goldenrod and stuff. There's some honeysuckle there, somewhere. ETA: And that area of the lawn certainly isn't groomed as it once was. Less lawn work for my uncle.
  23. I've decided to give this a try. Fresh sugar maple twigs will provide the surface area—I just finished peeling the bark off with a vegetable peeler, cutting them to size and sanitizing them. This will be a wide mouth quart jar experiment—beer vinegar ( just cheap beer this time.) It's actually two experiments as I'll be using Aldi's SimplyNature Unfiltered, Unpasteurized, Organic Apple Cider Vinegar. It contains an actual REAL mother!!! Backslopping with a little bit of vinegar. Source: ALDI, Inc. Wish me luck!
  24. The outhouse, as it sat, a couple years ago. My Dad snapped the photo.
  25. When my Father was young, they (him and his brothers and sister) ran to the outhouse, any time of day, any time of year, in their bare feet!
